Great recipe, for the tzatziki, if you have a little time beforehand, try to grate the cucumber, salt it, then put it in a strainer with a weight on top of it so it has time to drain some moisture (of course acount for the salt you put on the cucumber when you add salt to the rest). It really helps if you want to avoid making a watery tzatziki.
You're recipes are always so wonderful thank you for sharing! The only thing I have found different with grilling with skewers is doing one skewer all veg and one all meat. That way the cook times are roughly the same and you don't end up with overcooked veg and undercooked chicken. The presentation isn't as nice though. I will definitely try the homemade pita bread recipe next though!
