I love hearing Martha say "scant". I agree with her though, a little almond extract goes a very long way. I would think that a bench scraper would be much more efficient than an offset spatula for filling those thin molds. Plop the batter at one end, make a pass over it with the bench scraper and done. Less air bubbles too.
