One thing that really strikes me in the Taiwan and Korea street food videos I've seen is how fresh, clear and clean the oil that they deep fry foods in is. I've seen street food videos from other countries where the oil is very, very dark and probably not very fresh.

Taiwanese here, there are dark and greezy street food oil, it just didn't show in this channel often.
