I ran a gluten free bakery as a cottage food (home based) operation for 3 years recently. Your brief explanation of the costs of doing business as a specialty bakery was spot-on. I sold at a local flea market on weekends and didn't get into shipping products but the costs of ingredients alone were substantial. I wish Alycia the best and look forward to buying from her as soon as she opens online.

I've made tons of keto dishes, but when I'm looking for the best recipe that even my non keto friends will enjoy, I'll check to see if Alycia has already done it and I'll follow her recipe. I've never been disappointed and my friends can't believe it's a low carb dish. I especially love her keto ice cream recipes.

Most have no idea what it takes to produce their Keto cookies, bread, cakes, etc. I specialize in Fresh Floral Keto Cakes & it's usually like pulling teeth to get people to pay $35-$40 for a 100% scratch made 2 layer cake that's filled, buttercream'd & decorated with a dozen fresh flowers, sprinkles, topper, custom box/ribbon + business card nutrition label. The average cake takes me 4-6 hours over 2 days & can't be assembled until the hour before pick up, to ensure fresh flowers. I guess when you make it as a Cottage Baker (from home) people don't realize all the labor & expense that goes into it (even if they're absolutely thrilled with what they get).🤷♀️ Thanks for putting it out there, Steve! And, thanks to Alycia for sharing the details, + her recipes! I follow her channel, too...I find her story very inspiring.

I actually made Alycia’s bread recipe yesterday! Proofing was a little iffy using a warm oven, but it turned out really well. All the egg white breads I’ve tried have the same issue of sticking to my teeth- could be the allulose which allows the crust to brown. Anyway, I’ll continue making it. Thanks for your review. All her recipes are so good, and she is so generous to share with us.
This was good people really need to realize how much it costs to produce this stuff. As a beef producer the costs can be huge with very little return. We love what we do is why we do it.
I think the egg white bread toasts a bit diggerently due to the allulose content. I toast Indigo Nilli's bread very slow and low with oil and it's pretty successful.
Glad to see you help Alycia. She really deserves her channel to grow. The reason her bread toasted darker is because of the allulose. It browns/caramelizes quickly.
After a four year hiatus I have returned to Keto and have found you, (my wife watched one of your early testing videos with me, which was a very rare occurrence, but you maintained her interest because you gave the glucose readings after each trial) Dennis, (who took me a bit to figure out...but the David Attenborough paradoy has me hooked, as well as the sense of humor) Wes, (now that I figured out who he is by reading through comments) and Alycia, who has produced incredible recipes and my wife loves it when I make one of "my keto pastry chef's" recipes. A lot has changed in the Keto world over the past four years. I was brought back to the Keto world because my diabetes was getting worse and my wife was beginning to get ulcers in the eyes. We have to do for quality of life issues. What I have found in this newer community are sustainable strategies to make sure that we do not fall again. As I have watched Alycia, I am shocked that she gives her recipes out, and also have pondered the COST of the ingredients she uses. I am grateful for this review and raising awareness. I so wish we could all come up with a substitute for the whey protein isolate...for two people on a fixed income...it is a killer! Thanks for your work!
Yes! I agree! These ingredients are expensive! Paying $2 for the convenience of making a loaf of bread is way underpriced! I wish it wasn't so expensive to ship, but it is! That cost is very real for small businesses. Her channel is amazing and her recipes are amazing! We should definitely factor in the cost of recipe development. I'm a diabetic and I bought some sola bread from Walmart's My fasting glucose was 114 and I ate some solo bread with some meat and eggs and 2 hours later it was 105

other ppl call it "choke-y". Indigo Nili has that all worked out of her bread also :-) Steve is right; I try to warn ppl "this is not gooey starch, it is all protein & You need to mindfully chew it". As long as I put lots of sauce, gravy, butter or mayo.... No issues :-)
Did she calculate how much time and money she puts into creating these recipes. It's not free to experiment until you come up with something great. She does an amazing job; like many other keto product creators they work hard to come up with products to help us on our low carb lifestyles.

I admire Alycia so much! I've tried her recipes and they're wonderful, but just don't consistently work for me. I mean literally, 2 loaves of bread made back-to-back and 1 is great and the second craters. LOL! The fact that she's perfected everything enough to open a bakery is amazing!

Thanks for the review! I, too, have textural issues with an egg white bread loaf. If you combine Alycia's recipe with proofing along with Nili's grated butter (as Nili tested and acknowledged a non-keto site for the technique) you get an even tastier loaf and improved texture. In terms of costs, people definitely do not include even their own labor, power, cleanup, water, etc. - just ingredient costs when doing their own math for what it costs them to make these at home. Egg white powder as well as allulose are expensive and Alycia's time with very good equipment need to be adequately recompensed!
My Dad started a few businesses and what killed him was that he didn't want to charge enough to be successful. His product was great, people loved him(to this day 30 years later), but he went out of business because he couldn't pay labor and rent while keeps prices at the counter on level with McDonalds! God B less Alycia, hopefully she will find the sweet spot!

Economic reality check. You can buy bread in a grocery for $4.00 because they buy ingredients by the ton, and they ship by the pallet, they also use the cheapest ingredients possible, Keto ingredients are outrageously expensive by comparison. Anyone who thought that $12.00 was outrageous for Keto bread has never tried to make it, it just costs that much to make, the stuff that goes into it is just that expensive.
Wow. Even when you cook your own food, eating keto is pretty expensive. Are there any low cost keto foods? Maybe fasting is the lower cost alternative😊
Best way to "toasted" egg White bread slices is to dehydrate it at the highest setting of your dehydrator. It takes about 30 minutes to 1hr, usually less. They will look and taste like "Biscotte" = Rusk which is what I like and grew up eating. Thanks for this video.

Allulose, in my tests, burns at 330F. So I'm inclined to agree that it's a factor.
Agreed. Allulose darkens more, than all the other sweeteners.

His product was great, people loved him(to this day 30 years later), but he went out of business because he couldn't pay labor and rent while keeps prices at the counter on level with McDonalds! Economic reality check. You can buy bread in a grocery for $4.00 because they buy ingredients by the ton, and they ship by the pallet, they also use the cheapest ingredients possible, Keto ingredients are outrageously expensive by comparison. Anyone who thought that $12.00 was outrageous for Keto bread has never tried to make it, it just costs that much to make, the stuff that goes into it is just that expensive.

Best way to "toasted" egg White bread slices is to dehydrate it at the highest setting of your dehydrator. It takes about 30 minutes to 1hr, usually less.
They will look and taste like "Biscotte" = Rusk which is what I like and grew up eating.
