    I like this cut… leaves belly intact.. I got bunch to cut up tomorrow.. hopefully grill some up while I’m cutting

    Are there no pin bones or are they soft enough to not matter?

      There are a few pin bones but honestly they do t seem to matter too much. When I’m prepping for cooking I may just pull a few out then

    you should gill those heads and make fish head soup. the spine with extra meat and the fins also make a great fish bone broth for chowder or etouffee .you are missing a lot of flavor throwing away those spines.

      I agree, but we is very limited space to carry back on the air plane! It cost us a fortune how it was!

    This is why most of us Alaskans NEVER let guides fillet our salmon. By using the swipe along the backbone method he’s missing A LOT of meat along the backbone. A guide fillets for speed, not for maximum utilization of the resource.

      I understand, I myself have never cleaned a salmon so I wouldn’t know…with that said, what do Alaskans really prefer, King or red?

      Salmon are easy to fillet. And you’ll be shocked at how thick the fillets are when done properly.
      I don’t like eating salmon (only catching it) but my wife says king is so rich and fatty she saves it as a treat a few times per month. Her every day salmon are reds.
      Quantity is also a factor. We can only get 5 kings per year but we can get limitless reds. So we harvest enough to feed her and the dogs for a year. All for free!

      Can’t beat that…i thoroughly enjoyed both but if I had to choose, it would be the king. I hope to make it back up that way one day!
