CRAZY BLUEBERRY CHICKEN RECIPE!

- RECIPE!
4 chicken Breast
2 TBSP butter
2 TBSP olive oil
1 small onion chopped
12 oz blueberries
1/2 CUP vinegar
1/3 CUP Maple syrup
1 TBSP Rosemary
Blueberry Goat Cheese
1 TBSP honey
salt and pepper to taste
1. Stuff chicken with goat cheese and salt and pepper the outside
2. Melt 1 TBSP butter and 1 TBSP olive oil in pan over meduim high heat
3. Sear both sides of chicken. Set aside.
4. Heat up remaining olive oil and butter and cook chopped onions
5. Add blueberries, maple syrup, vinegar, rosemary, salt and pepper
6. Bring to a boil and then simmer for 10 minutes
7. pour the mixture over the chicken
8. bake chicken at 350 degrees f or until center of chicken reaches 165 degrees f

I dont think she did anything to take advantage of him, she paid him for his work, and she has complete right to say if the work he is doing does not like her, at the end of the day he was the employee, so if he does something wrong, Colleen has 100% the right to say what she wants, end of the story.

I’m so glad it worked out again! And that you wrote it down! Whenever I make a new recipe, I assume it’s going to fail. Most of the time, my sweetie will still eat it. I feel like when you work hard on a meal, you have higher expectations than if food is just handed to you.

I made this but used cream cheese that I added blueberries into instead of goat cheese. I also added in some fresh spinach because it needed to be used up. Best part was I already had the ingredients at home. It was a great dish. Thanks for sharing.
