      There are ways to find motor winding data but none of them are perfect.
      A suitable wire size and turns is used when the motor is manufactured at the factory. When we are rewinding the motor it is best to use the same size and turns of wires that were on the motor before

      3 phase motor have high starting torque, high efficiency that's why there not use the capacitor

    My question sir, is can i use Aluminum coil wire for starting turns and copper wire for running turns

      There is no problem if the running coil winding is copper and the starting coil winding is aluminum.
      It is best to use copper wire
