When you want to select all edges you have to make sure that 《selection filter:edges 》is chosen. Then you can double click on one edge and it goes through all the border edges. It goes the same for your second problem. Make sure the check box of edge selection filter is checked. Or if you don't want to use selection filter for the second problem, you can easily just hold down ctrl+shift and then select the edge that you like.
