let's make spotted dick! (a British steamed pudding)

Spotted dick is a traditional British steamed pudding made with dried fruit and suet, a type of fat from animal tissue. It's often served with custard. We will make that today using a recipe from daringgourment.com by Kimberly Killebrew!
2 C all-purpose flour
2 TSP baking powder
1/4 TSP salt
5oz shredded beef suet
2/3 Caster sugar
1 C dried currants
3/4 C milk
2 TSP vanilla extract
place metal cookie cutters on the bottom of a large stock pot
add water, and bring to a boil
grease 1.6-liter pudding mold
place flour, sugar, baking powder, salt, and suet in a food processor- pulse until the mixture resembles sand
transfer to a mixing bowl
add in milk, lemon zest, currants, and vanilla extract
stir until combined
put the batter into pudding mold- secure with lid
put pudding mold into boiling water, reduce heat simmer for 3-4 hours
