Liu loves Calaf because he smiled at her. She wasn't a servant, she was a slave and that smile was a moment of kindness that she has cherished ever since. Even when he dismisses it as meaning nothing, she and Timur have become so close in their exile that her loyalty does not falter.
She tells Turandot that she alone knows Calaf's name as she sees that as the best way to protect the old man. If they both denied knowing him, they would both be tortured.
Puccini described the story as being about two creatures who are outside the human norm. Calaf is fiery and impetuous; Turandot cold and stubborn. They are both arrogant, but Liu's death affects them both deeply and makes them realise the value of true love. Unfortunately the libretto does not fully convey this and Puccini died before he could finish the score. No doubt he would have insisted on clarification of the importance of Liu's death.

I'd like to watch full productions of Opera with English subtitles but have had little luck. Do you have any recommendations for places to do so?

There are streaming websites that have better subtitle options then RUclips does.(like met on demand, marquee tv, and medici.tv. But sometime it also works if you turn on CC on RUclips.

I really don't get this. European fairy tales are overcrowded with stereotypical, one-dimensional and unflattering characters, while when it happens in a tale set outside Europe it is racist...And I really don't get how this opera portrays chinese in especially bad way...

In the opening scene of act ii the three ministers actually state that China was happy and peaceful for ten thousand years until Turandot was born.
It is her influence that has led to cruelty and oppression.
