My theory after dealing with Richard, she was suffering from trauma of nearly losing her family. So she thought was trying to protect them only to realize she was alienating them ie. screwing with Nick's job offer in London just to have him around.
Because she was losing control and couldn't stand it. I would imagine Gail is nicer now because she's learned the hard way that interfering and trying to control your kids lives will drive them further away rather than give her back control.
