    More often called a ham but indeed its a meatloaf. Everlasting is another favorite recipe during the holidays season because of its taste and appeal on the table on noche buenas and fiestas. It is ideal for a big celebration party as it could be cooked ahead of time (1-2 days) prior to the day of feast. it was named everlasting on a belief that it wont spoil easily and would last longer because it has been cooked twice and can be stored inside the fridge and serve cold.     RECIPE:
    I kilo (2.2 lbs) REGULAR ground pork
    6 beaten eggs as binder + 2 boiled eggs for topping
    1 cup yellow onion or (1 large)
    2 tbsp garlic
    3 slices of ham or (frankfurter hotdog) diced
    1 medium carrots, diced
    1/2 cup red bell pepper, diced
    1/2 cup raisins
    1 cup tomato sauce
    2 tbsp catsup
    1/2 cup green pickles
    2 tsp. salt (adjust according to your taste, I used 2 tbsp)
    1 tsp. ground pepper
    1/2 cup grated cheese
    1/2 cup bread crumbs (optional)
    1 cup pineapple juice (add more if necessary)
    TOPPING GARNISH: 2 eggs (boiled 8 min only so that its perfect yellow no green ring) carrot, bell pepper, pineapple slices.
    GLAZE: the regular Everlasting recipe does not need any glazing, this is only my personal *touch because I wanted it to look more festive like christmas hams.
    1- 2 cups pineapple juice
    2 tbsp sugar (white and brown)
    3 cloves
    1 tsp green pickles or mustard
