Bounty is plentiful here, best I made is Malibu (coconut rum) syrup in dark chocolate. Almond Addict here, can only buy sweet almonds have to pick my own bitter almonds they grow naturally here in the Mediterranean. Almond sweet purist, dedication to the point its a religion lol :)
Love your videos Brittnee, I have learned a lot. Someone in the comments asked about shelf life for fillings. I have found that you can bag and freeze some ganache and it will be good for months! Also, if you have a wine cooler bonbons will keep for about a month. We keep ours at 58 degrees and seems to work well.
Yes! There are definitely ways to store fillings and ways to extend shelf life! I also use a wine cooler and it’s great! I am hoping to buy a AW reader because that is the official way to measure and predict shelf life. I can’t wait to be able to test fillings!

Quick question -- I made colored cocoa butter yesterday, using Colour Mill's oil based colors, if I add a bit of the white I made to the blue, will that make the blue opaque? Or do I need to add TD powder? Ingredients listed on the white is not showing TD as an ingredient.
I would add titanium dioxide. In fact, I don’t recommend colour mill…many people have had issues with the color butter thinning out too much and running out of the mold during shelling. I say stick to powder 🙂

I actually played with a recipe this weekend for these after you mentioned it in the last video. It tasted good but I realized my molds were way too small for cocoa butter, a chocolate layer, filling, fitting in an almond and capping. I seem to either have huge molds or super tiny ones! And I took my cocoa butter out of temper so that was an other issue. I was wondering how yours was so colorful and mine looked runny. Then I took the temp. Trial and error as I learn I guess.

Can't say without officially testing it...I like to advise to eat all bonbons within 1 week if they haven't been tested with the proper equipment or formulated specifically for long shelf life.

Yes! This is similar to a bounty just with added flavors. Those oils I believe are artificial...or possible just super concentrated, they aren't essential oils. You can use anything you'd like to flavor the filling or even just keep it pure with the coconut added! : )

Yeah! Almond Joy is enrobed in milk chocolate and has almonds in it! Mounds is dark chocolate and no almond. Bounty is milk chocolate and no almond! :D As for shelf-life...yeah that is always a good question! For sure I tasted these after 2 weeks and they were still good. But I am looking into getting an aW meter reader because I really want to be able to test recipes to be able to say 100%.

How to make a cherry and liquor filling like the mon cheri or the espresso filling like pocket coffee?
