The general rule is that if they seem to fly but stick to moving on ground tiles, any use of stun/freeze/sleep will usually disable their hovering (often permanently). True aerial units will often outright ignore the concept of tiles and just go anywhere in the playable area they want, and while disabling might ground them, they get back to flying immediately after.
