I do not know of many quests that cannot be done solo if you have a dog like an artificer. I recent soloed the necro2 quests. Mostly make sure you do it at a difficulty you can handle.
Short of a miracle .... I don't like spiders so .... I've been having to look up every single quest on the Wiki to see if they have them so I can mentally prepare myself... just was attempting to watch your Saltmarsh No Commentary playthrough and the first quest was super triggering for me XD ... Any potential suggestions for avoiding those as much as possible while still being able to go 1>20? (for the record the dryders oddly do not bother me ...)

Definitely use the coupon code DUNGEONCRAWL BEFORE 12pm EST on April 23rd, to get all the quest packs. For Level 5 range, Three Barrel Cove is great xp and I like the atmosphere. Necro I is also Level 5 range, but can be more challenging.
If its your very first time playing, I'd say running on elite to be familiar with the quests works well. Almost all LFMs up will be for Reaper difficulty and its players that will kind of blast through the quests. To get max xp, you want to be at most 2 levels above the quest.
A first lifer can ideally run everything on elite for maximum xp and better loot drops. I run with a group of 3 and we do R1 & 2 for the reaper points. Some rare drops are likelier on reaper!
Thats fair lol. This is a quick checklist of what quests I do per level. If you're just starting out, the Adventure Compendium in game will definitely help you out until you get familiar with quest and adventure pack names. If you have questions on which adventure packs to get if you want to purchased paid content with DDO points (which you can earn in game) I can definitely help with that too!
