Such an unusual technique, but it makes sense once explained. I am wondering whether you are using tart or sweet cherries in this recipe? Here in the States there is a distinct flavor difference between the two, and I don't think that's so in France, based on Nina's statements. Perhaps it doesn't matter? Enjoyed the taste test very much! Thanks for posting : )
The Cherries I used are sweet, that’s the only one I could find. I know some people like the tart ones. Honestly, in a dish like this, you would just use what you could find in the market, or in your garden. So both are ok. And the recipe will work for any cherries, wether or not they release more water or less. That’s the advantage of this technique.
can you please make desserts a focus of the channel? I'd love to see croissants and chocolate cakes that meet your standards. Plenty of recipes out there but your style is of the sort that would make me actually want to make it.
