The reason for that with the HD remasters is because they weren't true remasters, they simply upscaled the games into HD dimensions, but the textures are the original ones from the Gamecube. So a 480p texture viewed at 1080p is going to look terrible. This is why the HD Project is the best way to play the original.
Well the ps2 was the worse looking port besides the original PC version
