Ever since I discovered TH, it’s been the gold standard for measuring all other beers. The good news- I have yet to discover another beer as good as TH. The bad news- I have yet to discover another beer as good as TH. When traveling, I’ll throw some in my suitcase. Otherwise, I’m sipping bourbon or scotch when I reach my destination (not a bad option, btw). Nate, I enjoy your videos. And I admire the fact you offer honest commentary about the challenges of running a business which can be all-consuming sometimes. How did you carbonate the beer? Force carbonation in keg / tank or bottle conditioning? Also how long was the conditioning time before you put it in the keg and then put it inside the bottles? I've been waiting for this video for so long! 🤩

Is it possible to know a little more about the fermentation and dry hop of this beer? For example, was there a dry hop during the fermentation or afterwards, and how much dry hop was present per liter? This information would give us a more global picture of the beer and would help us understand the connections made during the tasting. Also, thank you very much Nate for this series of videos that allows you to transmit your passion in your own way and allows us to see how rigor, questioning and consistency is the key to success in order to constantly improve our recipes. cheers!
I'm really intrigued what it is you are smelling & tasting that you can pinpoint a late dry hop & over conditioning the beer has lead to. I would love to have that knowledge when judging my own beers! Absolutely love your channel & the videos that you are producing. I took the grist from this homebrew recipe for my latest hazy. I changed out the hops ( chinook, galaxy and bru-1 ) and yeast, but let me tell you, the color, and the head retention, for that grist is fantastic!
This is very inspiring. Thanks Neil. I brewed a sour inspired by the ice cream truck "Bomb-Pop" last year that we finished up quick-like. This video is inspiring me to produce a hazy IPA with the same flavor profile as the "bomb-pop". Barbe rouge, equanot and maybe some nelson with a touch of sabro and a FG of 1.018ish.
Seems like Nate found the time only by rolling out of bed and immediately slugging a home brew. Haha. Looks to be early morning there. Love these videos!
What malt would you recommend to bring up the maltiness in the background to rounding it out and balancing it? E.g maybe honeymalt, caramalt or carahell? What percent though, maybe 8%? And reduce carafoam from 10% to 2%?
I find it interesting that you say it is over hopped. A lot of the brewers online have said they thought you were a bit aggressive with the DH rate... What were your thoughts going in to this recipe creation on the DH rate?

Those things that take away your attention apply to homebrewers as well. Life gets in the way and schedules are not adhered to strictly. Who hasn't missed a dry hop date or left the beer too long before packaging.
it's not oxidized. < 50 PPB, which, by most objective measures is fine, but by our standard it's much higher than commercial process. the light is weird - it's pretty yellow in good light.

force carbonation via head pressure in a keg. it spend three weeks in the keg prior to bottling.

it's significantly less than our commercial dry hop rate, so I'm surprised. very likely a timing thing.
Sounds delicious! I make a similar beer hopped with Mosaic, Citra, and Centennial

it was the light. the beer showed no objective signs of oxidation and was measured at < 50 PPB. pale yellow in appearance.
