  • This might be a revelation to those who tend towards nasi goreng. This rice salad is made with nutty quinoa and raisins for a little bit of sweetness, or you can substitute with cranberries for a bit of a bite. This rice salad makes a satisfying meal and will keep in the fridge for at least a day.
    This recipe makes 3-4 servings.
    Ingredients:
    80g wild rice
    120g basmati rice
    50g quinoa (red or white)
    40ml olive oil
    30g of hazelnuts, coarsely chopped
    1 medium onion
    2 cloves of garlic
    20g parsley, coarsely chopped
    40g mixed salad leaves
    40g raisins
    ½ lemon, juice of
    Salt and black pepper
    1. Place the wild rice in a saucepan, cover with plenty of water, bring to a boil, and then turn down to a gentle simmer and cook for 35 minutes, until the rice is cooked but still firm. Drain, rinse under cold water, and set aside to dry.
    2. Rinse and place the basmati rice in a saucepan with 150ml of cold water, 1 tablespoon of the olive oil and 1/2 teaspoon salt. Boil the rice until nearly all the water has evaporated, then reduce the heat to the lowest possible heat and cover for 5 minutes. Remove from the heat, and set aside for 10 minutes. Uncover and allow to cool down completely.
    3. You can cook quinoa as you would the rice, with 60ml of cold water. Alternatively bring a small saucepan of water to a boil and add the quinoa. Cook for 8 minutes, then drain into a fine sieve, refresh under cold water, and set aside.
    4. Place the hazelnuts in a small frying pan with 1 tablespoon of the olive oil. Cook on medium-low heat for about 5 minutes, stirring frequently. Transfer to a small plate as soon as the hazelnuts begin to colour and set aside.
    5. Add 1 tablespoon of the olive in the same frying pan and add the onions, the garlic, 1/4 teaspoon salt, and some black pepper. Cook over high heat for 5 to 8 minutes, stirring often, so that parts of the onion get crisp and others just soft.
    6. Place all the grains in a large bowl along with the chopped parsley, mixed salad leaves, fried onion, hazelnuts, and raisins. Add the lemon juice, the remaining olive oil, 1/2 teaspoon salt, and some black pepper. Mix well and serve!

    Nasi ulam (nasi s@mp@h) bau wangi .. dulu tok kami selalu buat masa bulan puasa..bagi dekat jiran2.. daun2 ulam campur gaul ngan nasi.. boleh makan ikan goreng atau ikan masin

    Nasi ulam mmg sedap tapi kite pernah buat nasi ulam versi rase nasi kerabu.. daun kunyit, halia, kunyit hidup, lada hitam, budu, kacang botol, kacang panjang, taugeh..dan segala daun terasa nk letak. Org muda 20++ zaman skng mesti nasi ulam versi korea agaknya mcmana eh.
