My Favorite Healthy Ramen and Spring Rolls! | Lost in the Sos Ep 2

VEGAN THAI RAMEN
1 tbsp vegetable oil
3 garlic cloves minced
1" ginger finely grated
2 shallots sliced
4 cups vegetable broth
2 cups coconut milk
2 tbsp soy sauce
1 tbsp maple syrup
1/2 cup creamy peanut butter
1 lime juiced
1 tbsp chili flakes
1 tbsp mushroom powder
1 1/2 tbsp sesame oil
1 pack ramen noodle uncooked
1 block firm tofu, cubed
Toppings:
Cilantro
Lime wedges
Toasted peanuts
Shredded nori sheets
Green onions
RICE PAPER DUMPLING
Olive oil
Shredded carrots
Shredded cabbage
Diced shiitake mushrooms
Ginger grated
Onions sliced
Onion spring
Salt
UNMEAT giniling (This is my vegan option, but use anything of your liking! Can use ground tofu or your choice of meat)
For wrap:
Rice paper sheets
For sauce:
1.5 tbps coconut aminos (soy sauce)
1 tbps rice vinegar
2 tsp sesame oil
1/4 tsp sriracha sauce
Sesame seeds
Spring onions or coriander

I can relate too much on being a Mom. Having my 2 years old baby girl, it isn't easy to actually have time for myself because my husband goes to work at morning and goes home in the afternoon. We don't have anyone else at home so it's very hard for me. I sacrificed my career to take care of my daughter especially because I became paranoid due to pandemic. But now things are more at ease, I hope I can find better time for myself, as I am also planning to get a caretaker for my baby, even if I'll be working home. I love cooking and baking, and I hope to do more of it in the next weeks to come. Would love to try these recipes too, I love ramen and rice wraps too ❤ I love this episode, so obvious because I shared my own experience as a Mom. 😂
