how does keep their bow from skipping/jittering between up and down strokes? Is this just something that gets better with practice or am I practicing incorrectly?

I just can't get the hang of following the tune with the demonstration when it's played clearly first, then explained after really quickly, then moved right along. I end up having to constantly skip back in the video to try and figure out what I was supposed to do.
