HELLO! Steven here. Glad that you're here with us. I just wanted to say thank you for checking out the season premiere of Dish Granted! After spending five years traveling all around the world for Worth It, I felt like it would only be right for me to take a stab in the kitchen myself. My stress levels were off the charts in this episode but I think the bigger takeaway for me was getting to see the other side. I gained a little more empathy for all the chefs we've interviewed on Worth It, for what they go through in the kitchen and how they must've felt knowing that their dish was going to be judged by millions of people. At the end of the day, food is an expression of culture and love, and I hope to spread that through this show.

The moment he pulled out that blue flame Emile Henry dish, I was keeling over from laughter. Emile Henry bakeware are rarely measured correctly by retailers, but their sizes are fairly standardised, which leads to many bakers purchasing duplicates under the impression that there are smaller or larger versions.

Seeing someone break down cause a little bit of their dough ripped off is the most relatable thing I've ever seen
I once had a mental break down because a cake, which I had spent two hours on, accidentally fell out of my hands. It was for my mom’s birthday ;-;
I had a huge mental breakdown moment, when the cookies, that I had been working on for about 3 hours, were too hard to bite into because they were overbaked (they tasted good but that is, if you could take a bite out of it without breaking your teeth). After recovery, I soaked them in milk for about a day and then used a grinder to make it a batter like consistency. I then baked the batter and it came out as an amazingly dense and buttery cake.

I love how you guys incorporated some professionals in their field for their knowledge. Steven reallyyy challenged himself with this episode like making homemade pie crust for the first time?? Also being really creative by putting mac and cheese into a pie crust to fit Shane’s favorites was just great! Loving it so far - a great learning process and entertaining episode

Here’s a tip for piecrust. Before you roll out, put down wax paper or parchment paper and then put your dough on top of that and then put another sheet of wax or parchment on top of that. Then roll it out in between the two pieces, and then when it’s at the thickness you want peel off the top wax paper and just transport it and flip it over onto your pie dish and peel off the other wax paper. It makes things a lot easier.
Thank you! As a pie maker, the most nightmarish part of the process of it is rolling and moving the pie crust! I will definitely try this

The amazing part was, he seemed clumsy but was able to pull it off! I bake a lot and I screamed when I saw that first pie dough, but he managed to improve on the 2nd try, kudos to him!
he's also creating a new dish as he goes. you're watching the process as it unfolds. it's messy and clumsy. once you know what the recipe is it gets easier, it's less messy. it's art.

I love how Steven and Shane were being so wholesome and such angels to each other but the moment Ryan / Andrew are on the show I'm certain there are just going to be montages where they do nothing but roast each other
I'm not into cooking shows (they're too formal for me sometimes), but Steven is such an excellent host - funny, candid, relatable (especially the rolling pin incident)! I'm actually looking forward to the next ep!

I’m lactose intolerant but I haven’t said *shit* to anyone I know irl, let alone my family or my doctor, because I know they’d try to stop me from eating dairy and HELL NO
My best friend is lactose intolerant and loves cheese, especially Bleu Cheese. Something about it being forbidden but not deadly makes it all the more special

I love this concept! Cooking for people is an experience a lot of us miss during the pandemic, so this show is kind of like a dinner party by proxy. Plus Steven's presence is so pure and I love watching him fumble around and learn how to cook by trial and error. That's very much how I cook, too! I hope this is renewed :))
It's so funny seeing Stevens cool and confident reveal while knowing the extreme stress and chaos he experienced behind the scenes

Honestly I just have so much respect for how they are handling filming and COVID. Wearing masks, eating outside, staying far apart, ect. Way to keep the Swiss cheese together.
Steven’s cooking shows are like free therapy
The rue, and the pasta are the key to make it extra.
A flavorful and rich rue, with pasta that is just a little bit over al dente, so it doesn't get too hard in the oven.
Three cheeses, and again - breadcrumbs, topped with cheese that will melt with the heath of the dish itself, stringy and casually thrown on top, after it comes out of the oven.

as an amateur piemaker, i salute steven and his first piecrust. the struggle is real. everytime he cried or rejoiced i felt it in my flakey pastry heart.
Do you have any tips?
@@macklinillustration everything must be cold, which is why you have to use icewater. its so the butter stays solid when you bake it and makes a flakey pastry. i used to get a lot of cracks. you have to knead it enough and let it rest enough. but if you knead it too much, you'll lose the butter and it'll become tough when you bake it.
Though.. when the piecrust cracks during any part of the rolling or placing in the pan, i just squish it back in. Most people are just happy to have a nice homemade pie. they wont notice that seam...
Same, all the mishap he faced I've done it, I'm surprised he figured out quickly. Don't knead too much or else the glutten forms and pie crust comes out hard (use cake flour helps). I personally use food processor, pulse it and add ice water according to the dough texture.
Steven Lim is an American treasure and must be protected at all costs.
