you should buy the gas one, so keep the soup boil. Boiling hot so u know the food is cook. my way use chicken broth for soup base, then after food cook, we dip the sauces we mix our own. we use soy sauce, sesame oil, oyster sauce , spicy sauce mix whatever we like then we drink the soup ! the soup do good!! 原汁原味！

Joey C it's the Chinese translation of the mushroom. Just like enoki is the Japanese word for it.
