It also doesn't make sense that you need firework rockets to fly these wings from a dimension where paper and gunpowder don't exist. There could be a "blast-off" enchantment where you can charge up a crouch and launch into the air with a timed jump

I think a lot of people would enjoy an End update specifically because they never make it there. Because right now the risk isn't really worth the reward for more casual players, but if that changed? It would open up so many possibilities! New blocks of course, but also optional harder challenges and new redstone functionality
I find it odd to imagine that new blocks/redstone would be a bigger pull factor than elytra? To be sure, it sounds cool and I'd like an end update, but it just sounds like there's already a very good reason to go, asides from the dragon
The majority of survival Minecraft players never even reaches the Nether, let alone the end. It's only a very small percentage of players that would benefit from an end update, and it's just not worth the effort. Remember, most players are little kids playing on their iPad for an hour after school. Intense Java players that spend tens, hundreds, thousands of hours in one world are the group you hear the most of, but they're not at all in the majority.
I think they should also add more ways to get to the End. Keep the current strongholds, leaving the current End portals with the same functionality, but also add another structure with a different kind of End portal that you have to activate another way. Maybe in the Nether, ocean, or underground. Add clues or maps to help the player find these structures. That will add more adventure and more chances for players to access the new content in game without googling the answers, but they can still use the old way if they want. To maintain the challenge of reaching the Ender Dragon, and to set these new, easier portals apart, they don't take you directly to the main island, but to a new biome in the outer islands, with a source of wood, stone, a way to respawn there, new materials, and new challenges. From there you can build a base, venture out to the End cities, or search for a gateway in order to finally reach the dragon and beat the game.
Honestly I think if they did do it, they ought to add in dimensional beds too. Beds exploding in the Nether and End are cool, yes, they're an ancient mechanic. But it would be nice if you could surround a bed in materials from that dimension and it would no longer explode. That way Nether and End bases could be more official. I've just wanted End bases forever. 😂
@rfresa to build on top of your idea: what if those structures could only be opened from inside the End? It wouldn't skip the dragon fight or the game's progression, but it would make the End more accessible

A game I used to play had something very similar. There was a community island, your personal island, then other islands you could explore. While on your own island you could actually see the others! It was super cool but then they merged the personal islands with the community one :(
For an end update, I think it would be so cool if there were different versions of endstone. So the original endstone would be kept, but if we had new blocks in the same shade but different designs etc etc and they're layered in the end islands like how it is in the overworld, eveyrhting is layered dirt, stone, deepslate etc. So it would provide more insentive to go to the end to collect blocks but it would also make the end look prettier like it's a real different world with variation for those just going for the ender dragon and elytras. Maybe I'm just crazy loll.
For anyone wondering the mod for seeing a long way away was voxy. its available on modrinth for 1.21.11 fabric. however, voxy works differently to the bobby mod. Bobby keeps full chunks you’ve already loaded and just renders them farther out. Voxy does the same idea but turns distant chunks into low-detail terrain (LOD), which lets you see WAY farther without killing FPS. Bobby = full detail, shorter distance. Voxy = simplified terrain, huge distance. Hope this helps
