If you don't want to burn your Tahdig, you can put some plain rice at the bottom of the pot and mix the cherry and most of the rice and place the mixture on top of the white rice and mix the rest of the rice with some saffron and place on the top In this way you have nice Tahdig and three beautiful color rice
It is wrong to use butter for the bottom of the pot, because the butter will burn, and cherry rice is always eaten with saffron chicken or meatballs, not alone.😍😍

I’m not going to lie I made this exactly how you said and the rise barley had any flavor. The water definitely needs to be salted also I would say add more sugar to the cherries.

Whenever I make a mezze I add so many things from so many cultures, including Cherry rice, but for some unknown reason between the kitchen and the dining room two or three scoops have been eaten of the cherry rice. I tell my guests that it has something to do with the cook, ( that would be me) demands his ransom for cooking cherry rice...yes, it is a cheap excuse, so at least in that regard I guess Part of me will never really grow up...

Just 1 or maximum 2 table spoon of sugar is enough for this recipe. Any more than that, and you turn the rice dish into a candy dish. The whole thing stick together like a glue and ruins the rice by flavor and texture
Love your videos, however your rice looks a bit too soft, probably not suitable for parties as Persians would say. This rice is also served with chicken or small meat balls. Other than that your videos look so colourful and lively. Thanks
