  • How to make Beef Rendang-Indonesia’s No 1 Beef Curry Video Tutorial
    Beef Rendang is slow cooked to perfection in rendang curry paste, coconut milk, kerisik (toasted grated coconut butter) and tamarind juice.
    How to Make Rendang Curry Paste
    Throw in all the raw ingredients into the blender, add a quarter cup of water and blend until a smooth paste is attained. Transfer the rendang curry paste into a bowl and set it aside.
    How to Make Beef Rendang Curry
    Heat oil in a dutch oven or heavy bottom pan. Add the bruised lemongrass stalks, followed by the Rendang curry paste. Saute in medium flame upto 10 min until the water in the Rendang curry paste evaporates and the curry paste turns slightly dark. Add the powdered and dry spices (coriander, cinnamon, star anise, cardamon, bay leaves) and mix until well incorporated with the curry paste. Add the beef pieces, saute for upto 10 min or until the beef loses its raw/red color.
    Add the coconut milk, scape the bottom of the pot to make sure no curry paste is sticking to the bottom of the pot. Add salt, palm sugar and kaffir lime leaves. Cover and let the Beef Rendang curry simmer in medium-low flame for an hour. Keep checking and stirring every 15-20 min.
    Take the lid off after 2 hours of covered cooking and bring the flame to medium, allowing the curry to further reduce. Prepare the Kerisik but toasting grated coconut on medium flame for around 10 min or until it has turned caramel colour. Pound the grated coconut in a mortar once it has slightly cooled, into a fine paste. Add the Kerisik into the Rendang curry and mix well.
    Prepare the tamarind paste, add to the Rendang curry and mix well. After around 3 hours, a thick, rich, caramelized Rendang Beef curry is ready.
    Serve the Beef Rendang Curry with warm aromatic rice.
    Serves: 6
    Cooking time: 4 hours
    Ingredients for Rendang Curry paste
    4 large Spur Chillies (alternatively 10 red bird’s eye chillies-deseeded)
    10 Dry Red Chillies
    6 Shallots
    1 thumb size Ginger
    1 thumb size Galangal
    ½ an inch Raw Turmeric
    1 head of Garlic
    4-5 Candlenuts
    Ingredients for Beef Rendang Curry
    1300 gm (3 lb) Beef (Thick & large mix pieces of Chuck Roast & English-style Short Ribs)
    2 tbsp Coriander Powder
    1 inch Cinnamon Stick
    5 Cardamon
    2 Star Anise
    2 Bay Leaves
    5 Kaffir Lime Leaves
    3 Lemongrass
    1 ltr Coconut Milk
    ½ cup Fresh or Frozen Grated Coconut (Kerisik-caramel coconut butter)
    1 tsp Tamarind Pulp (diluted in ½ cup water)
    1 ½ tbsp shaved Palm Sugar
    Salt (to taste)
    4 tbsp Coconut Oil (to be used as cooking oil)

    As a Somali, I've never tried indonesian food until I came across Rendang from an Indonesian family.....I never looked back since then. It's worth the wait for the 3 hours. 😋

      As a chef with an Indonesian background I never had Somali cuisine. I’ve been interested in trying African cooking lately. I’ve learnt about foods from a lot of the world, the only African dish I know is tagine.

    I am from south India state of Kerala, we also cook beef in a similar way adding lots of shallots coconut milk coconut oil grated and fried coconut. One difference is we don’t add tamarind. And lemon grass will try with those and see. It looks amazing. Thanks for sharing

      Yes, real rendang don't use tamarind also, the bitterness came from the caramelized (close to charred) coconut.

    For anyone curious, candlenuts shouldn’t be eaten raw because they are poisonous. Cooking them negates the poison, but before that even one may cause death.
    Also, I WILL be trying this recipe, it looks amazing. Some spices will be hard to get though. No idea how Ill find these candlenuts, for examples.

    Excited to try this. But one thing to note, I had no idea what candlenuts were and ordered some from Amazon. Found out they are super toxic if eaten raw, I'm glad I found an article about that before they arrived because I love to taste test certain ingredients like nuts raw. I will be careful to not do that with the candle-nuts. Just wanted to put the warning out there if someone is trying this out for the first time and didn't know.

    Finally! Rendang made the way it should be. My Mum was from Sumatra and her rendang was the best. My sisters have cooked rendang but it's no way like the one Mum made. Have to be honest, I felt intimidated to try making rendang but I certainly will try it now. Thankyou ❤ I can almost smell and taste the divine rendang ...

      Rendang memang ada di Malaysia. Kuliner Rendang dibawa oleh para perantau2 etnis Minangkabau yang berasal dari Sumatra Barat, Indonesia masa dulu, sebelum negara Malaysia terbentuk.
      Para perantau2 minangkabau Indonesia juga yang mendirikan kerajaan Negeri Sembilan di Malaysia. Dari Negeri Sembilan lah kuliner Rendang Malaysia menyebar ke negeri2 lain di malaysia.
      Tapi, menurut seorang youtuber, vlogger tentang makan2 asal Indonesia. Ada perbedaan rasa antara Rendang Padang Indonesia dg Rendang Malaysia.
      Rasa yg beda itu, karena ada bumbu asli Rendang yang tidak ada atau tidak ditemukan di Malaysia, tapi bahan rendang itu cuma ada di negeri asalnya yaitu Sumatra Barat.
      Jika tidak ada para perantau2 minang asal Sumatra Barat yg pindah ke Malaysia maka kuliner Rendang tidak akan pernah ada di Malaysia.
      Mayoritas kuliner2/makanan Malaysia yg mirip dg Indonesia adalah dibawa oleh perantau2 Indonesia ke Malaysia dimasa lalu..... termasuk kuliner es CENDOL yg terkenal di malaysia dan Singapura juga.

    Dutch Indonesian here living in Luxembourg. I bought the ingredients last Saturday at an Asian market store and an Indian store. I didn’t have some of the ingredients like galangal or those green leaves. Also couldn’t find the Kemirin nuts. Also didn’t bother and didn’t have fresh grated coconut. Still the beef rendang I served today to some of my French and Luxembourg colleagues raised amazement. Beef rendang is an amazing dish to prepare and to serve. I think you should have served the dish with atjar ketimoen. The atjar I prepared was still to harsh in taste and I didn’t serve the atjar😢.

    Though I am not an Indonesian but I love to say this is one of my favorites. I miss rendang sapi. I used to eat this tasty food in one of the finest Indonesian restaurant when I was working in Qatar. Thank you for your video and I am planning to cook for sure.

    In my opinion this is the best recipe I've ever tasted. Now it's time to make it 😍...I'm 67 but I know this since I was a child growing up in Suriname.that's where I fell in love with Indonesian food... My next is Indian cooking from Kerala, India😋😋 I now live in Trinidad and here we have a unique kind of Indian food 😋😋 and this is equal to Chinese my grandmother was Chinese.     Right now, it's 4.04 am here, in Mumbai ,, I've been prepping since 12 midnight all by myself and have already prepared the curry paste and the kerisik ,, both have turned out good with great aroma ,, have used cashews in place of candlenut ,,,
    I will start cooking early tomorrow, after Eid namaz, cook for about 6 hrs to eat at lunch ,,
    I intend to eat it with Malabar Parotha as it feels like a good combination and of course with rice, too ( coconut rice, maybe )
    UPDATE ;
    So I finally completed the process of cooking Rendang for a late Eid lunch ,, it turned out awesome ,, the meat was really tender and had absorbed all the flavours ,, beef is not available in Mumbai so I substituted it with buff ( buffalo meat )
    My son who is very hard to please when it comes to foods of any kind - not that he is fussy, just that he never expresses craving for any sort of eatable ever - he, too loved it ( yes, tough meat dishes and seekh kababs he loves, if prepared well )
    My wife who is not a foodie and wouldn't care less about experiencing any cuisine, too loved it ( she especially loved the kerisik, I had her taste and it's here to stay in my family as the new coconut butter ) and for the first time, she praised any cuisine, so much ( my labour of love - about 10 hrs of prep and cook time invested in just one dish 😄 )
    I loved it too and our choice of eating it with the Malabari Parota - flat bread made of white flour ) was surely a big hit ,, the Malabari parotha, a popular flat bread from state of Kerala, the southern part of India is my suggestion to all out there, to combine with Rendang ,, don't make wraps, just break with hand your bite size piece of parota or parotha, wrap around the dry curry and lift it to your mouth, like the Indians do
    Ready made Malabari Parota or parothas, should most likely be available in Indian grocery stores in N. America, Europe and Asian countries

    I love to try the exotic food. This looks yummy and mouthwatering. I am familiar with Thai , Malaysian and Korean dishes but never tasted Indonesian food. This dish is very much like Kerala beef curry except for the Tamarind, lemon grass and Lime leaves. I will give it a try. I am Sure it will come out fantastic. Thanks for the recipe. ❤

    I like the presentation that this is a real meal that the husband has been waiting for. I would love to make this for my coworkers because we already have a taco Tuesday.     Hye!!! I'm Malaysian.. I've tried Indonesia rendang before and it's really tasty..full of flavour.. there's a bit different between Malaysian rendang and Indonesian rendang..but 97% smilar..got unic culture between this 2 nation.. I'm Malaysian and i love Indonesia..jangan selalu berantem di social media ya, kita udah serupa kakak adik..akhirnya bersatu juga..❤️

    The thing I find it most interesting about rendang is that out of all south Asian and sea countries that make curry. Rendang isn't your typical curry. Looks pretty dry to me after those 3 hours of cooking and although I've never tried it before I'm pretty sure it's delicious.

    You sound like you are from India. I grew up in UK and big fan of Indian food. I moved to the US in 1990. I became a big fan of Thai food in the early days of living here because of the many Thai restaurants. Friend of mine here said "If you like Indian food and you like Thai food, you will LOVE Indonesian food. He wasn't wrong. I was introduced to it in an Indonesian restaurant in Houston called Mata Hari which unfortunately is now closed. It was a higher end Indonesian restaurant. I now live in Pennsylvania. I learned a long time ago how to make Indonesian food (Opur Ayam, Rendang, Sate, Gado Gado etc) but really make it from the packet curry brands like Indofood brand. I appreciate the video to learn from scratch how to make. The one thing I am short of is sauce Kakang. That is the key to Indo food.

    My wife is from Padang, West Sumatra. And I would agree that traditional Padang prepared Rendang is the best in Indonesia. However there is one Padang restaurant that branched out to Jakarta and that’s also extremely great. Your recipe looks great even if the meat chunks are larger than the traditional sized I always eatinPadang. AdditionallyI my favorite part of Rendang is when the Coconut melange is charred a bit.

    I made this recipe some time back and it was just awesome.
    I put all the ingredients with the meat and let it cook slowly in the oven at 150'c for around 5 hours.

    Great video. I roughly make the same rendang but without the grated coconut which isn't always available in the Netherlands. It's a dish which always tastes great. I make it with cheap cuts of beef or lamb. I love curries.

Your Rendang is very different what I find locally in Singapore and, usually the meat is a little tough but unlike yours so tender and hmmm so delicious.

    Excellent recipe - the touch with the roasted coconut is very authentic which not even everyone in Indonesia knows about. In the olden days, you can't just buy cooking oil but need to make from grated old coconut by slowly cooking it on low heat until it releases all the oil. The leftover is the browned caramelised coconut which is then put into the rendang.
    Btw, for rendang we dont use tamarind, instead we use what is called 'asam kandis' which in english seems to be 'false mangosteen'. Also, we do not use dried chillies but only fresh red chillies (NOT bird eyes chillies though). In fact dried chilles are not known in Indonesian cuisine. The shallots used are also not as depicted but the smaller thumb size ones, which is stronger in taste.

      Asam kandis is dried sour carambola (Averrhoa bilimbi). Used as a souring agent mostly in Aceh cuisine.

      @@pakngah3715 No, it is different, it is Garcinia xanthochymus. It is not same as the Belimbing Asam / Belimbing Wuluh which is used fresh. Asam kandis is semi-dried similar to Tamarind.

    It seem the way you cook is very similar to mutton curry cooking in southern india and aceh (the westernmost point of indonesia) but the ingredient quite similar.
    There are many type cooking of rendang in indonesia and this is one of them.
