Seth Meyers is the best interviewer of Late Night. He doesn't cut off his guests to make lame jokes, he doesn't make noises on the sidelines to show that he's listening, he lets the guest finish their thoughts, responds to them, and then gently segues into other topics. He is a master of conversation.

Colbert is better imo because he not only does that but generates an atmosphere of intimacy by asking great questions and being super informed about them and the world
I feel like Graham Norton has the same energy as well, just lets his guests have their way (I'm sure the topics or whatever are rehearsed and what not) and he's often just sitting there while the guests seem to be conversing amongst themselves completely enamoured by whatever it had been they were talking about.
