The flavoring was perfect, and the red pepper flake was enough to keep it interesting for me, but not too much for my wife. I know this is from 2012, and you may not even see my comment, but I wanted to let you know that it rocked.
Just made this recipe tonight and it was un-friggin'-believable! One of the most delicious things I've ever eaten, and maybe in my top 5 best meals I've ever had. The glaze is outrageous. When I tasted it I think I blacked out for a minute.
Don't think it matters that much. I just used some Nantucket Nectars apple juice cause I couldn't find that fancy cloudy fresh apple cider, and it came out awesome. I might try some hard cider next time.

Made this for my dad & family tonight - only change I made was I added 1 Fuji apple sliced and about 1T butter; after the chops were cooked I added the butter and apple slices and cooked until a little color and they softened just a bit; then on with the rest of you recipe. I plated the chops with apple slices over the top and the wonderful glaze! Came out perfect and pretty! Pop said this was "a keeper." Dad (he's 85) asked where I got the recipe (when my mom could still cook she always came up with new things for him to try). I said, "Chef John ... U-Tube" .. he wanted to know where I met you ... so after explaining, I showed him this vid ... later, Pop was looking through your site and pointed out a few he thought sounded good to him .... Thanks Chef for making available easy to follow recipes to help me make my dad happy too!

Such a classic Norman (Normandy) dish apples pork ... .the Normans practiced (traditionally) an amazing combined sort of agriculture with animal husbandry and apple farming to take advantage of a particular soil and climate .. As you know most French Canadians (Quebecois) have their roots in Normandy.. Southern Quebec gave the Norman immigrants the chance to practice this sort of farming and cuisine with local ingredients making it our own ... For example in the recipe we might add perhaps a 1/4 to 1/2 cup of dark maple syrup and optionally some heavy cream and later in the year if they were available two small pan fried slices of apple with a taste of cinnamon as a garnish .. Bon Appétit ..!!!
i've made this recipe 3 times now, it's amazing and so easy. today, i only had 1 can of apple cider so i added a cup of chicken stock, sliced a green apple and sauteed it in butter, cinnamon, sugar, and cayenne then added it to the reduced sauce. it's still amazing. thank you chef john!

Oh my god! I made these with Bragg's Apple Cider Vinegar Ginger Spice instead of apple cider, and I can't describe how wonderfully tasty they came out!! Chef John, you're the best.
Used frozen past expiration chops, let em thaw out a bit, did what was said in the video, (cooked them a bit more for safety), turned out freaking amazing. It's great what you can do with cheap meat and the ingredients you have around the house. Thanks John!

@@gayleralan What we call apple juice is squeezed/ground up fruit juice that's been processed to remove starch snd pectin. Makes it very clear. Cider is the same as juice but without the processing to remove the starch and pectin. So it's very cloudy and "thicker". Hard cider is cider that's been fermented.
I always love the way you like to cook the own sauce of the meat, mixing some extra ingredients and cook all at the same time!. Its just perfect, natural and original of you own work dude! :D
I have made this before and it is ABSOLUTELY FABULOUS!!!!!!!!!!!!!!!!!!!!!!!!! I just want to drink the glaze/sauce. It was great with roasted potatoes and green beans. Tonight I am making it with baked sweet potatoes and sautéed spinach. ♥️
So today 17Jan,22.. I made these Pork Chops per your recipe. I was amazed at the flavor, slight hint of sweet,, and how the pork chops were so tender,, and very juicy... this was a nice treat... the glaze added charm to these pork chops.. also enjoyed a little bowl of sauerkraut.. well done here...
Made this last night me and the wife loved it and would with out a doubt make agian..Was filling just on one chop each and saved the other two..The meat is dense so maybe that's why it was filling yummy so good!
My go-to pork chop recipe and the chops ALWAYS turn out moist and tender. It's like cooking pork chops in candy sauce. I add onions and then I add a bunch of super thin slices on apples while it's reducing before adding the chops back in and just lay them on top of the apple slices. The sugars from the apple adds to it plus gives you a garnish to put on top on the chops when served. Let the apples cook til they are soft.
Just tried making these -added too much oil/butter at the beginning, so it took a long time for the pork chops to get that nice coloring, then added the garlic too soon, so had to re-add some later. Didn't have rosemary or chili flakes. But you know what? I turned out SO yummy anyway! I imagine if you were more careful in following the recipe amounts (and actually had the ingredients) it would be beyond fabulous...still SO impressed with how tasty even my meager attempt was. All hail Chef John!
