This is such a cool recipe, if I may ask chef, is there a way to make it gluten free? I’ve tried using tapioca flour, but I feel it creates way too many bubbles for the mix, so I was wondering if you had any advice for this recipe (with any other flour than rice since one of my family members is allergic to it). Store in ziploc bags, if you have you can place some silica gel sachets to keep them nice and crisp for up to 3 days. :)

Yes you can add sugar :)
if i use this as a drink garnishb will it melt and cause the drink to become oily?
it will quickly absorb and become soft. Oil particles may also be visible after a while. I wouldn't use it in a drink :)

Chef, is the mixture fried in a dry pan? How do you get it out of the pan without breaking?

Better to blend, but its not necessary 😊 you can whisk
