If you wanna avoid that spillage and not have a plate you need to clean after, just flip the tortilla into another pan of the same size which will continue the cooking process and allow you to mould the shape in order to make it perfect, also I don't recommend using olive oil to cook it as it'll just toast the bottom, instead try using a non stick pan and releasing the sides every 5 seconds by running a spatula around the edges and then giving the pan a circular jiggle to release it and give it a perfect disk shape, I'd also recommend caremalising your onions separately in a pot by cooking them on a medium heat with a little water and stirring them around, adding more water every time the water evaporates and they start to stick to the bottom, this will give them a beautiful golden and soft texture that will really compliment the flavour or the tortilla
I prefer it cooked to fried , no potatoes can add onion if you want but i love it without onion, beat egg add salt and seasoning pour in a small plate or container add little water to the pot and boil i love it
we make and eat this omelette in PH... but we just pour the beaten eggs to the pan and it will cook the same... then you dont need to flip to a plate to invert it just broil in the oven .... less work, less dish to wash...delish no meed of bread or rice but you could slice and sandwich it on a bread with ketchup 😋

Was it just me or did anyone else see that salt and black pepper was added to those eggs in the first instance and then added to the eggs again before they were mixed with the sauteed potatoes and onions? Is it compulsory to add the salt and black pepper to the mix twice like that? Just asking though
Nice but too much oil; a little goes a long way. Remember, onions and potatoes are watery. Overall, good job. I can type this because am a grandma who can correct mistakes and teach as well with love🥰
la cebolla verde esa no la he visto en una tortilla en mi vida, en ninguna comunidad he visto que le echen eso. Y la pimienta tampoco. Una tortilla de patatas lleva huevo patata y cebolla (la cebolla es más opcional o según gustos, hay gente que discute por eso, a mi que cada uno se la coma como prefiera)
