    RECIPES
    CHERRY & VANILLA COMPOTE
    2 cups frozen cherries
    Vanilla pods: amzn.to/40HFSXY*
    1 tbsp chia seeds: amzn.to/4gmw7Ek*
    1 tbsp maple syrup: amzn.to/3WMBNRb*
    Juice 1/2 lemon
    Place the frozen cherries in a pan on a medium heat and bring to a gentle simmer. Use the back of the spatula to gently mash down the cherries. Once cooked down, add in the chia seeds, maple syrup and lemon juice, and stir through before leaving to gently simmer. Run the back of a knife down the vanilla pod, then slice open lengthways and gently run the back of the knife through the pod to collect the seeds. Add the vanilla seeds to the pan and stir through, then remove from the heat and allow to cool and thicken. Place in an airtight jar, store in the fridge and use within a week.
    TRIPLE ALMOND GRANOLA
    3 cups rolled oats (not porridge oats!)
    1/2 cup whole almonds: amzn.to/3WKfXxz*
    1/2 cup flaked almonds: amzn.to/4hmOkD0*
    Pinch of sea salt
    1/2 cup smooth almond butter: amzn.to/4jHghqK*
    1/3 cup maple syrup: amzn.to/3WMBNRb*
    1/4 cup coconut oil, melted: amzn.to/410vTyh*
    Pinch of sea salt
    Roughly chop the whole almonds, leaving some whole for texture. To a mixing bowl, add the porridge oats, chopped almonds, flaked almonds and salt, mix to combine. Mix together the almond butter, maple syrup and melted coconut oil in a separate bowl until smooth, then pour into the dry mixture. Turn through to coat everything well, the spread out evenly onto a baking tray. Place in a pre-heated oven at 180 degrees celsuis and bake for 25-30 minutes until golden clusters. Store in an airtight jar, keep in a cool, dry place and use within a week.
    GOLDEN SPICED LATTE MIX
    4 tbsp cinnamon
    3 tbsp ground ginger
    1 tbsp ground cardamom
    1 tsp ground nutmeg
    1/2 tsp ground black pepper
    1/2 tsp ground cloves
    1/2 tsp turmeric
    Mix together all of the spices in an airtight jar. To make one serving, heat 1 cup of plant milk with 1 tsp of the Golden Spiced Latte mix and add in 1 tbsp maple syrup when serving.
    DARK CHOCOLATE & ALMOND BUTTER OAT COOKIES
    1 banana
    1/4 cup smooth almond butter: amzn.to/4jHghqK*
    1/2 tsp cinnamon
    1/2 tsp baking powder
    Pinch of sea salt
    1 tsp 1/2 cup porridge oats
    75g 70% dark chocolate, roughly chopped into chunks: amzn.to/42Fgswu*
    Mash the banana with a fork until smooth, then add in the almond butter, cinnamon, baking powder and salt, and stir in. Add in the oats and mix in, then add in the chocolate chunks and turn through. Mould into 4 cookie rounds and place onto a lined baking tray. Bake in a preheated oven at 180 degrees celsius for 15 minutes (Sorry! I said 25 minutes in the video!) until golden. Allow to cool slightly - to enjoy straight away, drizzle with extra dark chocolate and a pinch of salt - or store in an airtight jar in the fridge and use within 2-3 days.

      Ah sorry I should have said! These were regular (sweet) cherries, but sour would also work - you may just need to adjust the maple syrup content depending on your sweet/sour preferences! Thanks for watching ☺️❤️
