As usual, a wonderfully enjoyable video. The food looked amazing - hope to travel to Lisbon from Madrid on my new motorbike and this restaurant to Caceres definitely on route now.
The cod is most likely Norwegian cod. The salted version is called clipfish, you have the dried version called stockfisk. Stockfish is Norway's longest sustained export commodity exported to Spain, Portugal, italy and many other countries.
It could well be , I wasn’t aware of the provenance . However I will say that in my 2nd food walk in Porto , the salt cod came from Iceland . Glad to see stocks are good in both countries , as I hear that British North Sea stocks of cod are running low again.
@@primemutton mostly we eat fresh cod, but also fresh salted cod is a favourite. Most of the stockfish and clipfish are exported, but it is also used in Norway in various bacalao dishes.
Next time you're in Caceres slum it a bit... visit the bars just for a beer and check out the pinchos... what they call the free tapas... some better than others... the bars with the best pinchos are revered by the locals
Just found your channel through a love of Guinness, your content is great, good solid filming and information about the area alongside the food and drink. No whistles and fanfare like other similar channels…keep up the good work sir
For me the raw and rare pork dishes in Spain are a revelation, using really high quality meat. I obviously know it's not for everybody , so the next best thing is watching me eat it !
While I can speak some Spanish, as soon as I open my mouth ……. But I do like Spanish culture and lifestyle . I try as much as possible to replicate it here but dining at 10 or 11pm a bit tricky In Manchester .

I did find that cod used in Portuguese food was much saltier than that used in Spain. Does Norwegian cuisine tend to use fresh or salted cod ?
