I believe you mixed up the sauces, it's tradition to have black fermented vinegar with soup dumplings because the vinegar is supposed to help cut through the greasiness of the pork dumplings and the orange ginger sauce was probably for the chicken dumplings since orange ginger chicken is a common flavor profile
I love that you are so open to trying new foods and their utensils. Although I’ve learned how to use chopsticks before I could walk, I still prefer a spoon to eat Mapo Tofu with rice lol. Next time you go to an Authentic Chinese restaurant, you should order salt and pepper tofu or soft shell crab as an appetizer. For the entree you should order Mei Cai Kou Rou (pork belly and mustard greens cooked in a clay pot) and eat it with rice or Beef Chow Fun (stir fried rice noodle dish). I love veggies so I also order a vegetable dish called Ong Choi (stir fried water spinach with black beans and garlic sauce) which goes perfect with the pork belly dish. Happy holidays!
That vinegar was for the soup dumplings... You were suppose to bite the top of the dumpling, drink the soup out, then pour some of that vinegar sauce in the dumpling where you made the hole at.
The noodles are made out of mungbean and are called liang fen! If you like the taste, you should try liang pi which is similar and my personal preference. Also, word of advice, the restaurant you went to seems to speciliaize in a specific type of chinese cuisine, so next time try their saurekrat fish and spicy mala dry pot (mala xiang guo). Also, for an appetizer I recommend something called fuqi feiqian (husband and wife lung pieces). It may sound unsettling but I promise it is super good! Also, I know this is your first time, but I generally wouldn't order soup dumplings, mapo tofu, or any of those dishes at an establishment like this. China is such a diverse country with so many different cuisines that each restaurant speciliaizes in certain dishes. I wouldn't even call this a sichuan restaurant, it is much more of a fish restaurant. Anyway, I'm glad you enjoyed the experience and am looking forward to you expanding further into Chinese cuisine. Hopefully I will see you in Edison soon or in Fort Lee/Palisades Park since it is quite far!
For soup dumplings, I highly suggest Soup Dumpling Plus in Fort Lee. I've had soup dumplings in NY and they compete with some of the best there! For Sichuan cuisine, I recommend All Blue in Edison. And if you want to try liang pi, Xi'an Flavor makes a decent one.

Her mapo tofu is incredible. Lots of Szechuan peppercorns - fragrant and numbing. You might not want to eat some of the things she makes. She loves bitter melon (I hate it) and intestine (don't like it). But if you're feeling adventurous, try duck feet. Superb.

Good luck with the car. Before you spend $$$ on repairs, check you gas cap. If the attendant didn't tighten it right, the light will come on. I've had it happen plenty of times. Sounds like you have a mechanic you can trust but for the rest of us, going to Auto Zone or Advance Auto and having them plug the OBD device to get the error code is a good place to start. Typically, the light comes on for an issue with the emissions system, like an oxygen sensor. Hope it's something simple and not the catalytic converter which can cost a couple grand.
