The white trail is just the jet fuel freezing up in the air. The cruising altitude of commercial airliners is below freezing, and so while the jet fuel is propelled out of the engine, it freezes when it exits the engine.

That is just a plane, probably flying dozens of miles from you and at a much higher altitude aswell.
