Ugh. I love eating, but I can't deal with raw meat. I think I've only made chicken once in my life. After dealing with that (esp that fat) I could not eat the finished meal.

No need to season the inside? I get the lemon and herbs underneath but why not salt and pepper the underside as well?
I think the steam filled with the aromas of the herbs infuse it? Not entirely sure
