Garifuna Cuisine, Dangriga, Belize - Hudut Soup & Fish Fillet, Tomato/Rum Sauce, Cassava Fries

    Recently in Dangriga, Belize I met up with Madeline at the Riverside Cafe. I joined her in the kitchen where she taught me some Garifuna recipes.
    The Garifuna are descendants of African shipwrecked slaves who interbred with the local Carib and Arawak people of St Vincent. When the British took over St Vincent from the French, the Black Garifuna were exiled and ended up settling all along the Belize, Honduras and Guatemalan coastline.
    Madeline prepares Hudut - a fish soup with a coconut milk base which contains okra and green plantain dumplings.
    Madeline also prepares the Riverside cafe Specialty dish - Grilled Fish Fillet with Cassava Fries with a unique rum, tomato and soy sauce.

    I remember her, she was so nice and they could cook. Used to order my food from Riverside cafe while I was working at the radio station. Good times.

    I might experiment a bit then, I usually keep videos to under 3 minutes, but will start adding some longer form ones. The only problem is uploading them as I travel, sometimes finding fast net can be a headache

    11 minutes is not too long. It was long enough to show the process and to get to know the personality of your subject. Madeleine is charming! The video could have shown the cooked meal all plated up and being eaten. Thank you for such a natural, unstaged video -- the best kind for showing how people live in a different culture. Looking forward to more of these! Thank you.

    Madeline is so lovely to watch! Even though it's her first time on camera, she seems so accustomed to being in front of the camera like in a real cooking show! :)
    I'd love to see more of your adventures WITH LOTS of interesting FOOD all around the world. Good job, Mark! :)

    the 10-12 minute is a good time its not to long not to short perfect =) i would like more videos this length gets into more depth then a 5 minute video etc keep up the good work

    Peel and boil an equal quantity of ripe and green plantains for about 10 minutes then mash them up till they make a thick paste. They use a large wooden mortar and pestle here and beat it but I mash it with a bottle!

    You just peel and boil an equal quantity of ripe and green plantains and then beat it in a large wooden mortar (they call it martyr here!) with a large stick with a rounded end (pestle) until it turns into a thick paste.

    Garinagu people were shipped as slaves from West Africa to Barbados but they escaped and marooned in St. Vincent and intermarried with the arawaks. The only group of west africans that didn't become slaves. That's why the West African influence is very strong.

    I've watched this a couple of times Madeline! It's good! It is incomplete and it should have included the presenter tasting a sample of the cooking. It's fine other wise.

    Never slaves my brother. They came from Mali in.1311 merging with the Kalinagu. The shipwreck myth written by Btiitish Commissioner William Young of Yurumein ( St Vincent ) to undermine indigeneous status.

      Me too.I grew up on nothing but Belizean Food.My dad was originally from Stan Creek Belize but he later moved to Dangria.I'm proud of my Belizean culture and heritage.

    GARIFUNA TRIBES are Benin people of Ñigeria they left Benin kingdom1440=1473 during the Regine of king Ewuare the great they left Benin kingdom because of strong forbidden traditional law king EWUARE lost two son in war they left Benin kingdom some of them are in Ghana Call GA TRiBE some in HONDURAS Call GARIFUNA TRIBES Some in BELIZE.
