    Main Ingredients

    Semolina(Sooji) - 1.5 cup
    Spinach - 150 gm
    Carrot - 2 nos
    Green Chilli - 4 nos
    Kashmiri Red Chilli Powder - 1 tsp
    Curd - till the batter get smooth
    Baking Powder - 1/4 tsp(each bowl)
    Baking Soda - 1/4 tsp(each bowl)
    Salt - as per taste(each bowl)
    Homemade Ghee - for brushing
    Methods

    Prepare the Green Batter (Spinach):
    In a large bowl, mix semolina with baking powder, baking soda, and salt.
    Gradually add curd to the mixture, whisking to create a smooth, thick batter.
    Set aside for 10-15 minutes to let the semolina absorb the curd.
    In a blender, add raw spinach and 2 green chillies.
    Add a tablespoon of curd to help the blending process.
    Mix this spinach puree into the first bowl of batter, stirring well to combine.
    Adjust salt if necessary.
    Prepare the Orange Batter (Carrot):
    In another large bowl, mix semolina with baking powder, baking soda, and salt.
    Gradually add curd to the mixture, whisking to create a smooth, thick batter.
    Set aside for 10-15 minutes to let the semolina absorb the curd.
    Grate the raw carrots finely and blend them along with the remaining 2 green chillies until smooth.
    Again, add a little curd if needed.
    Mix the carrot puree into the second bowl of batter.
    Add kashmiri red chilli powder for a vibrant color and slight spice.
    Adjust salt if needed.
    Prepare the White Batter:
    In third bowl, mix semolina with baking powder, baking soda, and salt.
    Gradually add curd to the mixture, whisking to create a smooth, thick batter.
    Set aside for 10-15 minutes to let the semolina absorb the curd.
    Cooking the Appe:
    Heat an appe pan over medium heat and brush each cavity with homemade ghee.
    Pour a spoonful of each batter (green spinach, orange carrot, and plain) into the cavities.
    Cover the pan with a lid and cook for 3-4 minutes on low heat until the bottom is golden brown.
    Serve:
    Serve the Tricolour Appe hot with coconut chutney, mint chutney, or tomato ketchup.
