It's the PH balance of the water. It does make a difference. I was in Manhatten last month and the pizza was definitely amazing. But same with the bagles. It's the water in both, I'm sure of it, changes the dough for both.
Here in L.A., they turned an old Arby's Roast Beef Sandwich shop on Sunset Boulevard in Hollywood (keeping the vintage building and iconic sign intact) into a Prince St. Pizza "Express Slice Drive-Thru." Tried it recently. The slices are a bit pricey at $7, but they are quite filling and the toppings are delicious.

Ive made square/sicilian pizza for 20ish years and only found out im part Sicilian a couple years ago. Our secret to keeping the thick dough juicy is what we call the Undersauce (basically brushing the dough with an olive oil / herb / garlic and onion marinade before and during a quick pre-bake of the crust). Always thought ill open a pizza joint at some point, ive never had pizza i prefer over mine/ours and no one whos tried it has ever not just devoured their slices
Has nothing to do with water. It's the culture and ingredients. NY pizza and bagels use bromated low hydration, super high gluten/high protein flour (banned in California). This produces the characteristic NY chew. NY pizza bears no resemblance to bread which some other regional styles tend to be. And the doughmaking process. Most of the famed joints don't cold ferment their dough through refrigeration. It's made fresh in morning and a room temperature same day dough to retain all that gluten strength. The low hydration and the gluten produces a doughball that doesn't require much bench flour to stretch out, and you need some strength to stretch that dough. The crumb structure of the crust after bake is tight and chewy. Also, Bourdain and Chang used to talk about microbial differences in kitchens of different geographies. NYC is like dirty or something so the yeast blooms different and has an interesting flavor.
That was the biggest pizza I have ever seen!!! You made that thick crust look so good with your every bite. I generally like regular thickness for my crust. Not thin or thick. I make my own about half the time. I totally agree with your taste on sauce. I make mine with fresh tomato, a bit of garlic powder, salt, fresh ground black pepper, a bit of chili flakes and a lot of dry oregino. My favourite toppings are bacon (which I partly pre-fry), pepperoni, breakfast sausage(cut in rings), mushrooms (partly pre-fried), green peppers, onions, sometimes I add thin slices of tomato on top and alway use a lot of mottazarella cheese. Hope the wife enjoyed a slice or more of the NY pizza! It looked awesome! 🍕💛

I heard NYC had really great water before arriving for my first time. I didn't think that could possibly be valid in any way. But, eating there I experienced a similar taste in the water that somehow seemed to reflect that same taste sensation reflected in certain breads I ate while there. Like it mingled into the food somehow. Or I was just really fing hungry from walking around all day long.

Hormel sells cupping pepperoni in stores in the US and it’s pretty good. I love thick crust (pan/Sicilian) pizza, which is why I still crave a somewhat dank Pizza Hut Pan Pizza a few times a year. It annoys me, though, when people confuse thick crust with Chicago deep dish (which is a not thick, pastry-type crust).
Ive been using hormel cup pepperoni since they came out years ago, and before that id buy there 2 stick pack i had to slice myself as it was the only cup pepperoni i could find locally. If you like to make your own, look up a cold rise dough so it develops flavor, any store brand whole milk mozzarella you shred yourself (fock the potato starch pre shred), hormel cup pepperoni, your choice of sauce....and a stone with an oven or outdoor grill set to max temp 500+. It will cook in 3 minutes or so if you're preheated well.

Dang that's a good looking pizza! I love the slightly crispy bottom of a crust like this, even though yours wasn't but yeh if you got it straight out of the oven. They have one of these in Las Vegas. The pepperoni’s are so thick and chewy. For sure spicy not too spicy. I usually order a 4 cheese square and the spicy spring then add pepperoni’s to it. Otherwise I feel like I am eating a Hot Dog cuz it’s got so much pepp ratio. 🍕🍕🍕
Water treatment does vary from city to city. They probably put something in the treatment that favors how dough is made. It's crazy that certain restaurants actually try to copy it.
I grew up in NYC and Sicilian pizza, which has a thick crust and is cut into rectangles, is actually my favorite (compared to the typical thin-crust Neapolitan triangle-shaped pizza NYC is best known for). The pizza in this video VERY much reminds me more of Detroit-style pizza - which nowadays is my 2nd favorite - than Sicilian pizza. The pie in this video looked VERY delicious!
I was about to be shocked that I had a different opinion than you on the pepperoni cups, because I think pep cups are THE best pepperoni. But it sounds like you got some non crispy ones. Non crispy pep cups are definitely not as good as crispy ones.

I've only seen a handful of your videos, which are very good by the way. You said that you love pizza and I wondered have you ever been to Italy. Many years ago I went on a skiing trip in Northern Italy and I tried many types of pizza there. Everything was amazing and I have never had any pizza that came close to being as good as those pizza's in Northern Italy. They had one that was made and coated in batter and deep fried. Omg that was amazing. (probably a heart attack waiting to happen) but if it was a video game, it would be pizza boss level. Nothing that I've had in the rest of Europe, UK or the US has compared to those 🍕in Italy.
That looks a lot like the square pie from one of my local shops, Mr. Bruno's in Lyndhurst, but at nearly twice the price. A square pie with pepperoni added at Mr. Bruno's will run you $26. Also, one of the hidden gems of this area is the Sicilian, or square pie. Everyone comes to the area for the "standard" NYC pie, but we have a whole pizza culture with several major styles. Of course, there's the Sicilian (which you just ate), and that can be found all around NYC and northern NJ. There's the bar pie, made famous by Star Tavern in Orange, NJ, but you can find it at quite a few spots around northern and central Jersey. Then there are two types of tomato pies, the Trenton tomato pie and the Utica tomato pie, both of which are pretty local to their specific areas. New Haven, CT, also has incredibly good pizza, but that's literally the only town in CT that has good pizza. The rest of CT is pretty mid when it comes to pizza, except for the chains that got their start in New Haven.

the possibly better alternative that you're looking for is Emmy Squared! they have locations in nomad, east village, west village, midtown west, hell's kitchen, upper east side, and williamsburg in brooklyn so wherever you might be staying you should be able to get it delivered or spend less on an uber trip than you have lately lol. I'm still shocked you came all the way to brooklyn for dave's hot chicken in an uber and went all the way back. I've only seen a handful of your videos, which are very good by the way. You said that you love pizza and I wondered have you ever been to Italy.
Many years ago I went on a skiing trip in Northern Italy and I tried many types of pizza there.
Everything was amazing and I have never had any pizza that came close to being as good as those pizza's in Northern Italy. They had one that was made and coated in batter and deep fried. Omg that was amazing. (probably a heart attack waiting to happen) but if it was a video game, it would be pizza boss level.
Nothing that I've had in the rest of Europe, UK or the US has compared to those 🍕in Italy.

That looks a lot like the square pie from one of my local shops, Mr. Bruno's in Lyndhurst, but at nearly twice the price. A square pie with pepperoni added at Mr. Bruno's will run you $26.
Also, one of the hidden gems of this area is the Sicilian, or square pie. Everyone comes to the area for the "standard" NYC pie, but we have a whole pizza culture with several major styles. Of course, there's the Sicilian (which you just ate), and that can be found all around NYC and northern NJ. There's the bar pie, made famous by Star Tavern in Orange, NJ, but you can find it at quite a few spots around northern and central Jersey. Then there are two types of tomato pies, the Trenton tomato pie and the Utica tomato pie, both of which are pretty local to their specific areas. New Haven, CT, also has incredibly good pizza, but that's literally the only town in CT that has good pizza. The rest of CT is pretty mid when it comes to pizza, except for the chains that got their start in New Haven.
