@@brilliantbutblue never had it with sour cream, I'll have to try it sometime. If you don't have coconut you can substitute with rice and it's still delicious.

That sounds yummy, I am not sure I have ever had peanut butter frosting on a cake, maybe on a cupcake. Sounds like a winning combo.

This was easy to answer! Made from scratch red velvet cake with homemade frosting. This cake is a family favorite. My mom grew up eating this cake on special occasions, my sister and I grew up asking for this cake on our birthday and now our children ask for this cake every year on their birthday. We only have this cake on birthdays and sometimes at Christmas so I think that's what makes it such a special treat.
Ok, I may need your recipe because I have always been on the fence about red velvet but maybe because I haven’t had a good one. Would you be willing to share the recipe?
@@ThisAlaskaLife Absolutely! This recipe was my great grandma Shonkwiler's recipe. She and my Grandma Shonkwiler were great cooks; always everything made from scratch with food they grew, raised themselves or their husbands hunted. One lived to be 98 and the other lived to be 92.
Red Velvet Cake
Pre-heat oven to 350.
First, mix 1 ounce bottle of red food coloring, 1 ounce of water and 3 tbsp. Nestle Quik together in a bowl. Let stand.
Mix with a fork in a bowl:
2 1/4 cup all purpose flour
dash of salt
1 tsp. baking soda
In another bowl mix together with electric mixer:
1/2 cup Crisco shortening
1 1/2 cups sugar
2 eggs
1 cup buttermilk
1 tsp. vanilla
Slowly add in the flour mixture to the wet ingredients and mix until all flour has been incorporated into the mixture. Then add in the red food coloring mixture and mix until batter is red.
Grease and flour 2 round cake pans. Divide the mixture equally into the two pans.
Bake for 30 to 40 minutes (depending on your oven) or until a toothpick inserted in center comes out clean.
Let cool.
Frosting:
Cook 8 tbsp.flour and 2 cups whole milk until thick like pudding. Chill in fridge until cool.
Add to cooled flour mixture:
2 cups sugar
1 cup Crisco
1 cup real butter (do not use margarine)
2 tsp. vanilla
Beat until fluffy. Be patient with the frosting...it will take several minutes for the frosting to become fluffy. I usually let mine beat in the electric stand mixer 10 to 15 minutes.
Remove cakes from pans. Frost the top of the first cake, them place the second cake on top and frost the top and sides. So delicious!
This is the best Red Velvet cake. After eating this recipe my entire life, I can't eat the boxed version or any that come from a restaurant or bakery.

Thanks for sharing the idea about saving the raspberry juice ! I recently started buying frozen raspberries to put in my yogurt and it does have a lot of juice -- I had been just putting it in my yogurt -- but I am going to try to remember to save it! My favorite birthday treat? Something chocolate! Although, I have a friend who is a good baker and I often will let her choose what she wants to make :-)

I actually love regular cake. I make an amazing chocolate oil cake that is good for everyone. No dairy so great for lactose intolerant people. I am not but still enjoy it. But regular birthday cake is my favorite.
