●Sauce for Hiyashi Chuka(400ml)
200ml chicken stock
120ml soy sauce
50g sugar
100ml vinegar
1 tbsp sesame oil
●Macerating sauce for Char Siu
2tbsp sugar/soy sauce
1 tbsp Shaoxing wine
1 tsp oyster sauce
1/2 tsp ginger juice
some five-spice powder
●Shiitake Fukume-Ni
4 dried shiitake mushroom
1 tbsp soy sauce/sugar/Shaoxing wine
100ml soaking liquid from dried shiitake.

醤油は日本のすか?僕もたまに一から作りますけど、中国の醤油使うと味がいかにも中華っぽくなって美味いすよ!チャンネル登録して数年経ちますけど、初コメントです(笑)今までのレシピで店開けますね!

いつもながら、手が込んでて感心します、鶏がらスープからだしを取ったり、手抜きなしですね(^^)砂糖はすべて三温糖を使ってるんですか?
フェアリーショコラsp 普段は三温糖です。妻が三温糖しか買ってこないので^^;コクを出したいときはザラメ、艶を出したい時は蜂蜜って感じで使い分けています

美味しんぼというマンガで冷やし中華は日本の醤油より中国の醤油を使ったほうが美味しいとなってたが、中国の醤油は美味しくないそうで(中華料理のプロ言)中国でも値段の高い日本醤油のほうが売れてるそうです。
