    From what I understand plant milks need stabilizers to make and hold the foam. Here in the US we have barista plant milks made especially for espresso drinks.

      KayeAllayne I recommend trying some different varieties of varying quality. Chicory also makes the flavor quite nice and smooth, even in instant coffee. I am a coffee drinker, yet they are not all my favorite, and the difference in how enjoyable the brew is can be quite noticeable.
      I suppose that I look at it like pineapple pizza vs sausage. They’re both pizza, but perhaps sausage will be more enjoyable. This is not a critique of your preferences or anything, just suggestions ;)

    I use 16 ~ 20g coffee beans, 60ml espresso(including crema), 240ml alternative milk.

      @@jijo2002 Domestic and also manual machine will be a bit different. Commercial machines are likely exerting more barometric pressure than his lever machine, so you can grind finer and produce a more concentrated espresso. With less pressure (and also with lighter roasted coffee that tends to be more acidic) you'd likely want a more dilute ratio.

      240 ml of milk seem to be too much. For 50 ml of espresso I find 150 ml of milk is about right.

      @@mrzezzy4828 the traditional La Pavoni makes espresso like no other machine. Once you experience a Pavoni, there simply is no substitute.

    If you can find Oatly Barista in Japan, give it a try! It's specifically made for use in coffee etc, as the name implies. It's possible that they don't distribute in Japan but it's a pretty well known brand. The best milk substitute I've personally tried, it's thick & foams nicely.

    La pavoniは20gのバスケットでも二度下すと何だか美味しさが軽減する気がします。自分は20gのバスケットに22g詰めて少しキツめにして一度だけ下します。エスプレッソの量は24~28g程度とカフェラテに使うにはやや少なめですが、豆の量が多いので逆に水分を控えめにした濃い味の「リストレットショット」になって、カフェラテが更に香ばしく美味しく出来上がる気がします。是非一度お試しあれ!

      I'm one who grinds his coffee manually, but even so 2-3 minutes is my maximum level of tolerance, after that the parent's Nespresso capsules start looking really inviting in spite of myself.

      @@airnidzo If you have a hormone imbalance, a soy milk is least of your issues. I suggest that you see a doctor asap.
      Also, worth keeping in mind that majority of people in Far East are either lactose intolerant or allergic to it.

    コーヒー豆は焙煎してから3日程度置いておかなければ、豆にガスが多く含まれていて、抽出が安定しません。
    スイートスポットは豆や焙煎によりますが
    3日〜12日程度が美味しく飲めるベスト
    期間と言われています!
    豆にもよりますがシティーローストだと、焙煎から8日程度が個人的にベストで好きです。
    豆の量もですが、
    豆の挽く目を細かくすれば
    濃度の濃い抽出もできます。

    For people who are home roasting, general rule of thumb is to wait about 10 days off roast before using the beans for espresso. They really need to rest to get rid of the CO2 fully.

    I'm simple, I'll just use whole milk. From cows. If course, we are all different. My La Pavoni is 35 years old, and she makes the finest latte.
    Beautiful roasting apparatus, I enjoyed your passion!

    I would love to see a test of different alternative milks for coffee! Especially since many coffeehouses offer more than one type, it can be confusing to decide which will go with the type of coffee you want.

    りょうやさんの以前の自家焙煎の動画(たぶん、一番最初の自家焙煎動画)で、カスが周囲に激しく飛び散っているのを見て、自宅での焙煎をあきらめました。
    でも、今回はさほど飛び散っていないように見えました。
    豆によるのかもしれませんが、このぐらいなら、私も自家焙煎してみようかなという気持ちになりました。

    Great to watch .. I also roast my own coffee, using usually a blend of 3 beans (each roasted separately before blending for grinding) and I use a La Pavoni Pro like yours on weekends, and my semi-pro La Pavoni Cellini Classic on weekdays. A beautiful combination. My son and his girlfriend use soy milk .. I stick to the old cow milk (light)! Here's to coffee which lights up our lives.....

    I'm such a purist when it comes to my coffee. Being Caribbean we make our coffees with the cloth method so that coffee is super pure, but living in America I have tried so many ways of drinking coffee, but I still do the cloth method at home. I will probably purchase a coffee machine, but will rarely use it 😂

    Konichiwa! There's is a milk alternative we have in Europe called Oatly milk barista edition and that's been one of the most popular milk alternative in EU. If you get a chance, you should try it :)

    I make my own cashew milk. It’s very easy and I think is the nicest taste for flat white / latte. Impressed by your home roasting!

    I have a suggestion. Perhaps using very strong coffee will work better with oat milk. I recommend trying coffee that is 3-4 times stronger. Coffee can have an almost chocolatey flavor when it is very strong, which might pair better with the oust milk.
    It might sound gross, but I’ve realized that certain ingredients pair better with extremely strong brews than others, and may help cut away the bitterness.

    There is so much videos on the yt that teaches you how to make plant bases milks, try to make it yourself. That way you can adjust the thickness of the milk and hope this will be more cheap.

    Gayo Bourbon type is great too. They don't peel the cascara when they dried the coffee, it makes a super aromatic scent. Great for cold brew. For light roasted, imho Temanggung Excelsa or Ijen Mountain are quite good. It got less acidity.

    I really enjoy Milkadamia Latte Da Barista (macadamia based milk)- as an alternative milk. It steams pretty well, and the taste is much better than oat milk. Almond milk is my second favorite, like you were saying.

    I use half oat and half soy milk with my lattes. Just fill the milk jug a quarter of the way with one and fill it to half with the other milk. I like oat milk but it doesn’t steam like regular milk. Using soy milk helps stabilize it quite a bit. It also provides a better sweetness, I use vanilla soy milk.

    I know there's a brand called Oatly and they have a "barista edition" for oat milk, maybe that will work better? For other non-dairy milk, I'm thinking if cashew milk would work. It's sweeter than almond but very creamy and also very easy to make at home. Not sure how well cashew milk foams, but taste-wise it should work well with darker roast coffees.

    Baristas in Singapore usually use Minor Figures’ oat milk! It’s a UK brand, it has the best consistency for foam in my opinion. ☺️

    Macadamia nut milk is really delicious with coffee.
    there is a company called Milkadamia (and they have a barista blend), but i searched and was unable to tell if you could purchase it in Kyoto. (i believe they have some farms in Australia, so it may be imported in Japan)
    what’s nice about macadamia nut mil is it has a very similar protein and fat content to cow’s milk, so it foams really nicely. i preferred the version with a little sugar, for balance at the end.
    i also either make my own oat milk (using your previous video !), or purchase oat milk. the flavor tends to be a little more balanced when it is slightly sweetened oat milk, the unsweetened lattes tend to be a little more bitter.

    Rice milk especially goes well with coffee, soy milk and macadamia milk tastes great with coffee too. Pure Harvest plant milks has less additives just the nut with water,that's personal preference.

    Yeah, it really depends, because the type of milk, if is smooth or strong, will entail in the type of coffee too. Like you said, maybe a deep coffee gets better, the milk who is more watery, the coffee must be strong.     Thank you for another excellent video. Here's my experience with milk: Cashew has much creamier feeling than other alternative milks for me. Also, at some point I was making bullet coffee with coconut milk and coconut oil, and it had a perfect rich creamy feeling, but coconut is a strong taste and I get it when not everyone likes it. Still I think alternative milk and different oils is a combination worth exploring. I hope your hand gets better fast!

    Have you heard of Happy Happy Soy Boy milk? Two Australian men teamed up with a Japanese family who are 6th generation makers of soy milk. It is the BEST soy milk I have tasted with coffee.
