Also, I don't think it is complicated at all, you can just remember that after e5 Nf3 you just pin the knight and follows up with Nd7 to avoid the tricks on f7, only knowing that you can have a good game in this variation, so it's super usefull video.

I'm guessing you haven't encountered it often, but after 3.f3 de4 you should probably mention 4.Nc3, which transposes directly into the Blackmar-Diemer gambit. The same applies with 3.Nc3 de4 4.Bc4! followed by f3. Since the BDG is quite dangerous, especially for the unprepared, I think this is one of the more important side variations that black needs to be aware of.
I know this is very late, but if your castled (Like he says to do in the vid) after Bxf7 you respond with h7, which is trading the bishop for the knight, while also gaining a tempo on the bishop and an open h file for your rook.
What do you think about an early e5 (without exchanging pawns on e4) to remove white's pawn from the b6--g1 diagonal and then placing Bc5 and Qb6 to dominate said diagonal?
A very playable variation is 1. e4 c6 2. d4 d5 3. f3 Qb6 Then you aim to play e5, Be6, and Ne7 as relatively simple developing moves. The knight on g8 can go to e6 and then to g6 to target the pawn on e5.
