Try soaking minced onion in water for about 5 minutes before using it. That might help release some of the stuff in the onion that burns your mouth but still allow it to have some of the flavor and texture of the onion. It might not help, but you never know, it could.
I made it today and it was sooo. It was my first time cooking with tortillas and I was kinda nervous but it came out amazing!! 1000/10 I only made one tho and now I regret it . Should've cooked atleast 5 😭😭
