How is that for some OLD SCHOOL french cooking?? I love rillettes and I love Salmon so here we are. If you want to try this with a different type of fat like cream cheese instead of butter or creme fraiche instead of cream just GO FOR IT! Happy Cooking to all of you.
Dude, awesome. I won't say I would've *never* cooked this, but it wasn't at all on my radar. Now it is. Hope you're not too lonely in these strange times, I appreciate your videos! Edit: if you ever come to SLC, UT, would love to have you to the taqueria I cook at!
You’re my friend Sunny! As a college student that moved into my first apartment living by myself for the first time ever, I can’t stress how much I’ve learned from your videos. Truly a joy to watch
you are great man. I really enjoy your vibe of clearly having extensive training/knowledge/experience in classical/"high brow" cooking and just casually sharing that with us.
I've also lost almost all my friends due to them having children. It sucks. We ARE your friends, Sonny! 😊😊😊😊 This recipe looks AMAZING, and I LOVE salmon, so I'll definitely try it soon. Thanks!
Hey there from London, England... Couldn't swear to it, but supplies seem pretty good. Yours are the best cooking videos out there for me. Great choices, explanations, energy and pacing. Look after YOU!
Hi Sonny, I'm in Dutch Harbor, AK. My family and I love French cooking and this is a solid winner. Our shelves are bare and when I recreate your recipes, I have to sub. ingredients, but we are able to harvest some from our back yard.
That’s so Awesome! My Family is always talking about a trip to Alaska. It’s probably never gonna happen but wishful thinking. Lol I’m sure it’s beautiful there. On TV the Mountains and ice are amazing. Be safe friend
I'm in Columbus Ohio. Here, we have Giant Eagle Market Place stores ( which are way better than Krogers and the other large grocery chains), and they have an EXCELLENT selection of spices, produce and fruit that good cooks will love. In addition, because Columbus is a foodie hub ( really, don't let the snobs in NY fool you), a lot of smaller markets have ingredients you would never think you'd find in Ohio. Lastly, the diversity here has led to an interest in ethnic foods from around the world and this has led to a bunch of specialty markets that specializes in providing herbs, fruits, produce and meats for cooking foods from a specific region or culture. The range is immense, and more of the home cooked style than commercial. From Somali, Ethiopian and Arabic, to Indian, Asian, Mexican and American Bbq, we have it here.
I love you too, Sonny! I’ve never had rillette but this looks delicious! I live in North Louisiana and the supply chain has definitely been affected by the winter storms across the country. Thankfully we have a great local farmers market and the weather is currently quite magnificent! Btw I miss my friends too. I’ll be your friend. Might just move to Colorado and be your friend in real life. That might sound a bit creepy. Please don’t block me! I need you to help me level up my culinary skills! Thanks for having the best cooking channel ever and teaching me tons of awesome recipes. Your rosemary salt and steak cooking techniques have changed my life! I appreciate you. ✌🏼
Man, I could relate to your poignant moment of recognizing your loneliness. I too was really lonely during the pandemic. I live just far enough outside of Atlanta that it’s not easy to get together with folks on a good day, much less with the restrictions we faced during the pandemic. I hope you’ve gathered a new set of friends! ❤
Sending hugs your way Sonny!! You have a friend in me and many others. You brighten my day every time i watch one of your videos. Hang in there and know you have people who love you!! ❤️❤️❤️
I made a duck rillette in October for a New Year’s Eve party where all my cooking friends try (but refuse to acknowledge) to outdo each other. It was actually a pretty close call since someone actually made Scotch eggs (SOOO delicious!) but the fact that I also made mustard tarragon crostini pushed me over the top. I have no idea what I’m gonna do next year!!
Southern Maryland’s supply chain sucks. Blow Jiden has left our shelves bare. Meat section of the grocery store reminds me of what you would find in Russia. Love your videos!
Following you from Germany. While times are crazy I do get all I need, supply chains don't seem to be affected at all for the stuff you'd need in the supermarket luckily. Thank you so much for your hard work and sharing your passion for cooking. I really enjoy watching your videos.
I'm from Scotland and my local supermarket shelves are packed up with Herbs, fresh Veg etc. We are doing good and I always buy Salmon and some sort of Whitefish, Scallops etc.
I live in the middle of Saskatchewan up in Canada, our grocery chains have been hit hard as of late. We don't have all the variety of foods larger centers have but it's too the point that if you want to eat greens you need to go out or just buy cabbage cause 1 it's hardy lasts a long time and you don't find it rotten on the shelf
Sonny you are such a gem of brightness in our world and love your videos lil bro! I’ve got leftover pecan crusted salmon and the hubs (Mark) and I are gonna have this tomorrow night as our app with some beautiful steaks! Thanks for the inspiration and this recipe! ❤ y’all, Kristy in Missouri 😃🇺🇸🇺🇸🇺🇸
I would be so happy to be your friend! I binge watch your videos all the time! I have this little mental game I play about people that I would love to sit and have lunch with. It's a short list with some interesting names on it, to which I have added yours! Please keep making your fantastic cooking videos! Every one of them is a jewel! Your friend, Troy
Salt Lake City area here and it took me three different stores to find garam masala the other day. And your Thanksgiving brine with juniper berries stumped me in November, although I just recently saw juniper berries in stock at my local grocery store. If you're ever driving through the area you've got a friend to your west! But I have kids too, we can ignore them though.
That looks really good! I'm sure your friends haven't forgotten you! I am definitely your friend though! You can invite this girl for food and hanging out any time. Lol 💙
I am planning on someday trying to make a tea, you know the high or low kind, for my husband. Maybe on a weekend would be a good time to try this? So , this recipe will be added to my savory menu along with some other delicious sandwiches. I am just so excited to try this. Thank you for sharing.
I live in North Alabama. There have been pretty awful electric shortages in my local stores, not any worse than the rest of the U.S. I can get most everything online. I haven’t had any problems getting anything grocery wise. Some spices have been difficult to find. There were a couple weeks we’re the only honey available was the expensive stuff. I broke down and bought some. There’s always been a bourgeoisie option, if I really needed something. Only thing that was completely out one time was avocados, but those showed back up.
I’m an English guy that moved to Malta just before the pan so we left all our friends behind in the uk and thought it’ll be easy to make new friends out here, but oh no…..pandemics and stuff, but I’m a new Daddy “AGAIN” and it has bought our family closer together, I’m a stay at home dad my wife works remotely and you my friend have bought a whole new energy to my cooking game. The wife and kids genuinely get excited when I tell the what’s for dinner, just remember sonny you’ve got friends worldwide 🙏🙏
I'm in L.A. here and we are stocked up like it is 2019. My girl's in Long Beach and she mentioned the cream cheese was out at one store, so... Great stuff as always, pal. Classic dish, funny vid
I'm from Slovakia and we have really great produce, you get everything you would ever want, some things take time to find in specialized shops, but in general, it's great :-) keep the energy in the videos up!
@@icedcat4021 well we have weekly markets, where you can find really great range of produce, when you know few sellers there, you can get and "preorder" anything
I'm in Atlanta and I work at the state farmers market we supply Kroger and publix and alot of grocery stores in the southeast. And most of the shortages are pretty normal for our industry this time of year.
Good one I’m gonna try. I smoke a side of salmon and make basically the same thing but use smoked salmon. Eat on it for days. Great appetizer! Looking into that fish farming info as well👍 Love your channel, learned plenty and love your humor. Love, DD…
think about it like this, you want to build layers of salt along the way, dont put to much at once and do it near the end so you dont over season. can always add more but you cant fix it if its to salty.
You should try making court bouillon with dry vermouth. Daniel Gritzer from Serious Eats used it in his shrimp scampi recipe, and because of that, I tried it out a few years ago on a whim in the court bouillon I made to poach a shrimp cocktail. It turned out absolutely incredible; after the shriimp was done and the shrimpy goodness had infused the broth, I darn near could have chugged that delicious concoction. If I had had the foresight, it would have made a delicious risotto too.
Hi Sunny if it wasn't for you I don't know what I'd do. You been a good friend in these hard times. You remind me of my brother who I use to cook with.I don't cook with him anymore because of Covid. So you know I love am I'm out. Just like my brother use to say. 🙂
I got that exact same burn on my left hand, reaching into an oven, I hit the top burner. The scar has lasted for decades, as a little reminder....so that I put my mitt on, every time 🔥 feel better soon
Actually, we didn't have any supply chain issues when it comes to food because Quebec produces a lot of food. We exported a lot of the food we produce.
YEAHHHH! Beautiful! I'm making a salmon mousse or paté today. I have my own recipe but will incorporate some of your technique here. That creme looks delicious. Or… I may just make yours straight up next time! Thanksgiving is coming up! Either way, I adore you and your style. Thanks for always sharing interesting recipes and techniques. Cheers!
Hey Sonny, that's a lovely rilette there! Here in The Netherlands we don't have any supply problems and everything is available in abundance. Prices however are sky rocketing....
I did a way cheaper quick version of this, but with canned salmon, lemon, minced onion, minced jalapeños, black pepper and cream cheese. It went over well with my work and boyfriend, but yours sounds more decadent. Mine is quickly frugal. :)
