i adjusted some of the measurements to my liking. I added an extra tablespoon of sugar and 1/2tbpsp of corn starch as the consistency was runny. I miss authentic Thai coconut ice cream that i used to get in Bangkok and i tried one here but it did not taste as good. Throughout the process i had my doubts and i thought that it wont be creamy but it came out perfect. Now i can finally enjoy Thai coconut ice cream from the comfort of my own home. Anyhow, it just frozen all the way and i took few scoops out and added caramel on top. I felt like I'm in heaven. It taste so good.

Hi. I was reading the various messages as well as the one you replied about using the preferred coconut can. From this can of coconut, you only used the thick coconut white cream on top? No mixing of the milk (at the bottom of the can) but just scoop off the thick white cream? I did wonder looking at the video that it looked more creamy than milky when you were pouring into the pot. If it’s coconut cream, then I will just buy the cream itself. Thank you again for this recipe because I love Thai coconut ice-cream.
I made it exactly the way it’s shown.after keeping it overnight the ice cream is very hard.So I blended it again and kept in the freezer for 6hours.The taste is good.

❤️❤️ I prefer coconut can better than Coconut powder , I used coconut milk OSC brand or any brand you can found 😊 ( usually in coconut can we can get coconut cream and coconut milk by not shaking before use then we open coconut can On Top part is coconut cream you can get creamy texture after finish creamy texture is coconut milk 😁 ( good for cooking Thai curry as well ) carnation milk brand also have 2 kinds condensed milk and evaporated milk but for topping coconut ice cream thai style we topping with evaporated milk 😁
OSC brand coconut milk isn't available in my country. Could you please say the percentage of coconut and water that is stated on the can so that I can find a suitable alternative brand. Thank you so much. 🌹

Other recipes blend the coconut milk after the first freeze. Can someone explain the reason for (1) freezing, (2) stirring, (3)REfreeze, (4) blend, before (6) freezing the final time. How does the result differ by skipping (2) and (3). Seems like that would save hours. Depending on when the process starts, you would practically have to set an alarm to wake in the night to blend. (!) It seems like a lot of steps - basically 2 days before the end result. Thank you!
Thank you for your comment 😁Different chef Different Recipe and technical then you can choose to make your own way you like 😊 For me Stir and Blend even more time but result is for smooth as much as we can for homemade ice cream if you don't like smooth texture you also can eat straight away no need to blend or stir result as ice texture 😊

The good Coconut milk in a can usually has no sugar in it. You don't have to be nasty about there being sugar added, just leave it out if it bothers you. Maybe you need some sweetening up though 🤔

I never try that style but we add flour need to heat for texture when flour is cooked ☺️
The heating makes the cornflour thicken the milk. You need this 'custard' thickness to make creamy icecream.
