How To Bbq Tri Tip

  • Learning how to bbq a Tri Tip over charcoal with a little cherry smoke is pretty easy. I cooked this ona handful of good lumpwood charcoal and a chunk of cherry wood for smoke.
    Using the meater thermometer to ensure the Tri Tip was a nice rare to medium rare, I took it to around 50c internal temperature.
    Cooked with salt and pepper only onto the Tri Tip, then rested.
    It turned out perfect.

    California native and frequent tri-tip griller here. Season your meat! A full dusting all around the cut is what you’re looking for. At the very least a salt and pepper rub should do you well.

      Hey Christopher, I used plenty of coarse sea salt all over, this was a beautiful longhorn grass fed tri tip so just wanted to taste the beef, a little smoke and sear

      I never understand how some people season like that? Just dumping all the salt in 1-2 spots

    I know it used to be kinda difficult to find in some states , im from CA, so it's in every store. A lot of my friends who moved out of CA say they can't find tri tip. It's my favorite, though. Im bout to throw one on the smoker right now.

    Born and raised in California and ate that my whole life. You started the fire correct but you put it directly over the fire. Low and slow like a crock pot put it away from the fire. When the roasts reaches 125 or 130 then put it over the fire. It's called reverse Sear. Let her rest for 10 minutes then cut across grain a tri-tip has two different directions of gain.
    Let the roast hit room temp before above directions so it doesn't look like you can draw blood from the middle of it. 🤯

      Was perfect for me, I didn't say cook a california tri tip... believe it or not, other places cook this cut too...

      That cut came from Santa Maria California. Other places figured it out later..
      Tri-tip was perfected on the Santa Maria Style BBQ cooked low and slow over Oak wood.
      Google's your friend hot dog.

      @johnashbaugh4663 lol, I think the cut came from the cow, we have cows here in the UK, and they have a tri tip too, often called a rump tail as well...

      Butchers didn't make that cut off the cow for a long time. Not even on the east side of the United States.

    Something to remember folks, learn the technique, adapt the recipe.
    Everyone likes things differently, embrace that and do what YOU want.
    It's not really necessary to criticise amounts of salt and pepper, as these spices are "to taste" when you cook them for yourself.

      We all like steak cooked to different temperatures, and that will make any timings too variable and so void, its more the technique that's important

    Leather on the outside…rare on the inside. Reverse sear is the way in my opinion.
