This is a great idea, but I just use eggs, cream cheese, baking powder, vanilla and allulose to make the crepes. They're firm enough and no almonds, so no extra fiber or co-goigeners for those of us w/ thyroid issues.
@@susanr8711 Usually it's 1:1 oz of cream cheese to eggs. So for 4 oz cream cheese, 4 eggs. Then I'd use 1 tsp. sweetener per 2 eggs used. The almond flour helps keep a more solid structure on the crepes, but this version can work, too. I tried both versions and prefer it with almond flour added as there's just a bit more structure and holds up a bit better when stacking.
Question: the description says you fill in each layer with cream mixture and fruit, but the fruit only goes on top of the cake, correct? Looks yummy! ps. I'd be tempted to make a fruit puree to alternate with the cream layers 😋

You're 100% correct - you fill each layer with cream only, then the fruit goes on the top. I'll clear that up in the description 😀
