I've worked fine dinning and have seen mice because they come in dry goods, but roaches I've never seen in a restaurant. If it's to the point of an infestation I'm stunned the manager was able to remove that sign because an infestation takes longer than three days to get rid of.

An occasional surprise roach isn't a problem but multiples are an infestation and it takes more than cleaning to get rid of them. My mom was a hoarder when I was younger and we had an infestation, it went away when the trailer burned down, I swore after that that I'd never let her hoard anything again and I threw stuff out when we got into a new place, never had we ever had a roach problem again.
The issues are very clear and I've worked in food service. Managers and workers on a daily are more focused on the bottom line which is preparing food, serving and taking payment. Enough time is not alloted for deep cleaning. It's a management issue. Organizing cleaning efforts need to be a daily priority.

If I owned a restaurant, I would either be able to proudly let people with cameras view my kitchen and all food prep and storage areas or I just would find another business to be in. I don't understand these types of people..

Roaches ok if they are cooked. Rats are always in the Trash containers, out back of Restaurants. I bet no one got sick of there. as long as rodents or rats are not in the food. no problem.

well all that happen is that the county went back to the location didnt see any roach while there and said, we are good. reopen and serve the people

I heard from a property manager that the people from there tape the sides of the range, so that when the roaches crawl up, they get stuck to the tape.
