- Simple Kefir Ice Cream recipe anyone can do! It's a great way to introduce healthy probiotic culture into your diet the tasty way! You can even dress up this recipe with berry jelly, chocolate, peanut butter, or anything you want! Instructions below:

INGREDIENTS:
2 eggs
¾ cup organic sugar (or 5 tablespoons raw honey)
2 cups milk kefir
1 cup kefir cream or heavy cream
2 tsp. vanilla extract
INSTRUCTIONS:
Beat eggs well; beat in sugar. Start with a conservative amount of sweetener and add in small increments to taste; keep in mind that the finished ice cream will be slightly less sweet than the kefir mixture before it’s frozen
Blend in milk kefir, kefir cream and vanilla.
Transfer to an ice cream maker and follow manufacturer's instructions.

I made this recipe in my old fashion ice cream maker that requires ice cubes & rock salt (too much drama), and the results are amazing. I love this creamy and delicious soft serve ice cream with no preservatives. Thanks for sharing.

Don't you have to cook the eggs to a certain temperature?
Temper egg yolks only..!
1/4 cup raw sugar
1/4 sweetened condensed milk
1 and a half cups kefir
3/4 cup heavy cream

Can it be fermented overnight in the chiller before churning? so the kefir grains will eat the sugar in the ice cream
I'm surprised at how much kefir you could make with so few kefir grains! It is very thick too!
Mostly yogurt strains 😮not kefir grains they will multiply rapidly for half a liter of milk

raw eggs are usually okay to eat but be careful not to get the outside of the shell in as that is what has salmonella on it. if you are worried buy pasteurized eggs
You use raw egg to make real mayonnaise .

Why is egg used?
I believe its to make it thicker so when you freeze it, it doesn't turn into a block of ice. Most ice cream recipes call for eggs, and gelato calls for even more eggs. If you are allergic to eggs, searching online for egg substitution in ice cream brings up people using either cornstarch or cream cheese. I'm not sure what the ratio would be with the recipe I used though.

I've heard it's okay to use stainless steel, especially since it's only in contact with the kefir and grains for a short time and since stainless steel is nonreactive. I use a plastic strainer since I have one, but just something I heard recently! 😊
Wrong. It is pronounced both ways. And, I have used a metal strainer for years it's fine. Not metal spoons because the stainless isn't usually pure enough but the strainer is fine. Never lost a batch yet in eight years.
