    I’m a little late to the party and I missed the vote. This would have been it though, as someone who has been in and around professional kitchens for 25 years hands down this would be my go to. It has classic lines that would accommodate any cutting need with the heft to back it up on tough jobs, that tip is likely able to do some paring work. This a great all around workhorse I would pick up for getting the job done with all 10 knives in front of me. Simple is elegant and the fact that you made every piece of hardware is amazing. This is amazing for a 1st chef knife.

    You got some pretty tough competition in this challenge, House had a fantastic knife and so did Rivers...and then there was the world's biggest chef knife LOL. It's not the flashiest, but I think yours wins overall for practicality, simplicity, strength, corrosion resistance in a kitchen environment (damascus looks great but it sucks having to constantly clean it), and accuracy of the finished product.

    Excellent as per usual. Just one thing - that little sharp corner of the edge, closest to the handle. Don't know if its supposed to serve some purpose, but 90% of the times a kitchen knife has bitten me, it was from that. So, nowadays, when buying a new knife for the kitchen, first thing I do is to round that thing off a little :-)

      Hey Chester, It's personal preference. I like suiting up to get the grinds dialed in just once, opposed to having to come back. I also feel it helps me keep everything straight during HT.

  • @_BLANK_BLANK
    @_BLANK_BLANK 2 года назад +1

    Hey. Have you ever tried to make a tanto? I tried on a practice piece of steel (just some random mild steel or something I found) and I couldn't really get it figured out. I haven't seen a good tutorial on youtube for grinding one either.
    Just thought I would ask. At some point in the future I want to give it another shot, it definitely seems like good practice for compound grinds if nothing else.

  • @widneyburton5559
    @widneyburton5559 3 года назад

    Great job, man! I'd love to start seeing more kitchen cutlery on your channel. I do more kitchen cutlery than EDC or hunting blades in my shop. Next time you should try a distal taper on your chefs knifes! It's kinda tricky to get it down, but, once you do, you'll notice that they not only perform better but that the weight distribution of the knife as a whole will be closer to what you really want in a chefs knife.

    • @Skinflaps_Meatslapper
      @Skinflaps_Meatslapper 3 года назад +1

      Distal taper has a pretty steep learning curve unless you have some good equipment to work with starting out. I bet that surface grinding attachment of his could be adjusted for a super precise taper though. Arctangent of how much you want removed for the taper divided by length of desired taper and you've got the angle to set your surface grinder to, just have to precisely locate the blade when you swap sides...

    • @widneyburton5559
      @widneyburton5559 3 года назад

      @@Skinflaps_Meatslapper the beat way I learned it was by doing it freehand on my 2x42 grinder. I do it on very large kitchen blades and very small kitchen blades. Generally, the rules are always the same. And if you break it down in sections along the blade, then finish with full strokes on the belt grinder from heal to tip, you'll end up with a nice even distal taper. I definitely screwed up a few blades when I first learned this process. But I now have it down pretty well. It's not too bad, you just have to think ahead before grinding.

    Does your surface grinding system only use high strength magnets to maintain the knife on the jig while grinding? Every video I watched i'm in awe when in see this simple system !

    Love your videos. Question why do you use Windex when hand sanding?

    • @wjpshaw
      @wjpshaw 3 года назад

      Stops your sandpaper clogging up as fast so it cuts better and longer. Water works, but the mild detergents in Windex seem to help the swarf stay in the liquid a little better.
